Mango Kulfi | Easy Kulfi Recipe - Summer Special!!!

Summer at its peak in India and few other conutires but here in WI its still chill, windy and only from this week weather is getting warm and bright. After spending 6-7 months in minus degrees we feel 70 F itself too hot, sweat n thirsty. Dunno how we managed in India but now we cant bare the heat. Here the weather is extreme cold during winter and too hot during Summer. We keep ourselves hydrated & energetic by taking fresh fruit juices, lemonade, mocktails, ice creams on hot sunny days. Here we get all kinds of fruits round the year except the price varies but in India summer is very very special & colorful. We get the season's fruit - mango, watermelon, jack fruit, nungu(palm fruit) and everywhere you can find roadside shops/small stalls selling these fresh fruits, Sharbath, lemonade, khulfi, ice creams, badam kheer, tender coconuts, kambu koozhl, neer mor and many other summer foods. Really missing all!!!
So today's recipe is summer special recipe, Khulfi flavored with season's king fruit Mango- Mango Khulfi. Love khulfis more and first time tried this from my friend Nalini's space. I made this mango khulfi for my kid's birthday party and it was super hit and everyone loved it. My elder one who doesnt like mangoes(both raw n ripe) loved this khulfi and requested to make again for him :)
This is so simple, easy to make and way delicious khulfi recipe. I bet that none will say no to this yummy n creamy khulfi. Give it a try then u will accept my words. Thank You so much Nalini for this easy n yummy yummy mango khulfi, we loved it to the core. Now off to the recipe..


Ingredients
  1. Milk         2 1/2 cups
  2. Condensed milk     1/2 cup
  3. Mango Pulp    1 cup
  4. Milk powder       1/4 cup
  5. Cardamom Powder   1/4 tsp
  6. Sugar          2 Tablespoons
  7. Pistachios     2-3 tbsp crushed ( optional, I added) Method
  • In a heavy bottom vessel, mix all the ingredients - milk, condensed milk, milk powder, sugar bring it to boil.
  • Once it starts boiling, simmer it for 15-20 minutes to get little thick. 
  • Lastly add cardamom powder  mix well & Turn off the heat and let it cool down completely.
  • Once it is completely cooled, add mango pulp to this and pour the mixture into the kulfi/popsicle mould/mini condiment cups and freeze it for 6-8 hours for it to set completely.
  • Tha'ts it simple & yummy mango khulfi ready, to serve take it from freezer, run under tap water for 30 seconds then pull it gently  & ready to relish!

Notes:
I used store bought sweetened mango pulp, so did not add sugar.
Add mango pulp once the milk mixture is cooled cimpletely.
I used milk mawa powder.
If using condiment or paper cups like me pour 3/4 to the cup and arrange the kulfi cups in a box(container) then cover it using plastic wrap and freeze it.
After 1-2 hours remove the box using knife make small hole and insert stick to each cup and set to freeze for 6 hours.

    Our weather is a bitstrange here... in one day we can see temp's from 30 in the morning to 90 in the afternoon!
