So i couldn't bake them perfectly this time, because of lack of cutter the bottle lids did not worked well and my donuts did not hold the shape well. Somehow managed to click with it but the taste and flavor was so good. My kids did not let to rest the doughnuts after dipping in chocolate glaze. you could see their finger tips on the top :) But apart from this look and shape this is a great recipe to try and a must try for donut lovers. Now off to the recipe..
For Baked Doughnuts - Adapted from Lara Ferroni’s Doughnuts
- All purpose flour 1 1/2 cup - 2 cups flour
- Cake Flour 1 cup (or 1 tbsp cornstarch + enough all-purpose flour to make up to 1 cup)
- superfine sugar 1/4 cup
- Instant yeast 3/4 tbsp
- Salt 1/2 tsp
- Warm milk 1 cup
- Vanilla Extract 2 tsp
- Cold Butter, unsalted 7 tbsp or 100 gm ( cut into small pieces)
- Icing Sugar / Confectioner's sugar 1 1/2 cup
- Unsweetened Cocoa Powder 4 tbsp
- Milk or water 3-4 tbsp( i used milk)
- Vanilla Extract 1-2 tsp
Method
- As I was playing with butter n dough i could not able to click step wise pics this time..will try to update later.
- Put the sugar, milk, yeast, salt and vanilla in the processor bowl and pulse to mix well.
- Add the cake flour and 1 cup of all-purpose flour and process and then add the butter pieces one at a time and process till there no large chunks of butter are left in the bottom of the bowl. Now add a little more flour until your have a soft, pliable and elastic dough that is most but not overly sticky.
- If u feel the dough is sticky add little more flour.
- Now transfer the dough to a floured surface and knead gently until the dough turns super soft.
- Shape as ball and place it in a greased mixing bowl and cover with a damp towel and keep aside until dough double in volume.
- Once it doubled in volume punch down the dough and roll out as 1/2 inch thick circle.
- Cut out the doughnuts with a doughnut cutter or use a bottle lid (3" lid) and for center part use 1" lid.
- Place the cut out doughnuts over a lightly greased baking sheets or parchment lined baking tray, leaving enough spaces between them.
- Re-roll the dough and continue the same process until the dough gets finished.
- Let the this doughnuts rise for about 20-30 minutes or till almost double in size.
- Bake at 400 F for about 7-10 minutes till the crust turns golden brown, don't over bake them.
- While they are baking, Prepare the chocolate glaze and keep ready.
- In a medium bowl, whisk together powdered sugar and cocoa powder. Slowly stir in milk and vanilla extract. Whisk until silky and smooth.
- Let the baked doughnuts gets cool completely.
- Then dip the doughnuts in chocolate glaze and let rest to harden slightly.
- That's it....soft n delicious chocolate glazed donuts are ready to relish.
