Like Potato we love Broccoli and often make recipes with it. My kids like to munch Stir fried broccoli , baked broccoli, Roasted Broccoli or simply blanched n salted one as such. This is all because of my repetitive cooking recipes with Broccoli for the blog. So a big thanks to this blogging world. Now my friends named my family as " Broccoli Family" :)
Have tried/experimented more recipes with Broccoli & here's One more addition to my Broccoli Recipes, Broccoli Peas Pulao using Coconut Milk. This is very simple pulao with bursting flavors n taste. The combo of whole Garam Masala, coconut milk & Broccoli turned out so good and a very aromatic pulao I ever made. I also added a handful of methi leaves which is one more reason for the unique flavor n taste. If you are looking for some exotic recipe with simple preparations n ingredients this is one best recipe. Even people who do not like to eat broccoli will definitely love eating it this way. Now off to the recipe...Ingredients
- Basmati Rice 2 cups
- Broccoli 2 medium sized crown, cut into small florets
- Peas 1/2 cup (fresh or frozen)
- Methi Leaves 1 handful (optional)
- Onion 1 big (chopped length wise)
- Tomato 2 medium (chopped)
- Green chilli 5-6 no.s
- Ginger Garlic Paste 1 tbsp
- Cilantro 2 tbsp (finely chopped)
- Mint leaves 1 tbsp (finely chopped)
- Coconut Milk 2 cup (based on rice qty)
- Turmeric a pinch
- Salt to taste
- Oil 1 and 1/2 tbsp
- Shahi Jeera 1/4 tsp
- Clove 4 or 5 no.s
- Cinnamon 2" stick
- Cardamom 3 no.s
- Bay leaf 1 no.
Method
Wash n soak basmati rice in enough water, chop broccoli, onions, tomato, chili and make ginger garlic paste, Coconut milk or use canned one and keep everything ready.
Now heat oil in a cooker or pan, add the tempering ingredients, Fry for few seconds then add onions, cilantro and mint leaves n saute for a minute.
After that add ginger garlic paste and saute till raw smell leaves.
And then add tomato and green chilli, stir and saute till the tomatoes turn soft and mushy.
Now add chopped broccoli florets, methi leaves and peas, pinch of turmeric powder and stir fry for 2 minutes.
And then add soaked and drained basmati rice and stir fry the rice with vegetable masala for 2 minutes in medium heat.
Then add coconut milk and enough water(to cook rice- ie, for 2 cups of rice i used 4 cups of water-here i used 2 cup coconut milk and 2 cup water) and enough salt, combine well.
And cook for one whistle or cook with lid closed till rice is done.
Lastly add finely chopped mint and cilantro, fluff the rice gently.
That's it..Aromatic & tasty Broccoli Peas Pulao ready. We had it with Raita & Egg Chilli Fry.
Notes:
You can cook this pulao completely using coconut milk without water or use only water to cook this pulao, either way will taste good.
