Mango Chocolate Marble Cake / Mango Marble Loaf Cake ~ Home Baker's Challenge # 2

After completing after our first Challenge Pizza, a savory bake this time i chosen Mango Chocolate Marble Cake for the second month challenge. Thanks Home Bakers Challenge group members for giving me this wonderful opportunity to Host and give the baking challenge with my desired recipe. Its my long time wish to try this Mango & Chocolate combo, have seen many no bake cakes with this combo but not much the baked version. And more over its summer and Mango, king of fruit is easily available. So i decided to bake this mango-choco combo with you all and i have picked two different recipes, one with Egg & butter and the second one is Eggless & Butterless recipe. I tried the eggless & butter less version and it came out so good, very moist, soft & delicious cake. Actually i picked two recipes with Banana & chocolate combo and experimented with Mango Pulp instead of banana puree. To my surprise the combo turned out perfectly, Mango & chocolate paired well.

Mango Chocolate Marble Cake - Eggless & Butterless Version
Makes 9' loaf cake
Ingredients
  1. All Purpose flour     2 cups
  2. Baking powder       1 and 1/2 tsp
  3. Baking Soda    1/2 tsp
  4. Salt     1/4 tsp
  5. Sugar       3/4 cup
  6. Cocoa Powder     1/4 cup ( mix with 2 tbsp warm water)
  7. Oil      5 tbsp(i used Extra light Olive oil)
  8. Vanilla      1 tsp
  9. Mango Pulp     1 cup ( i used store bought mango pulp)
  10. Milk        1/4 cup**
  11. Buttermilk     1/4 cup**
Method
  • Preheat oven to 350 degree Fahrenheit and Grease & line the pan with parchment paper.
  • In a large mixing bowl, combine sugar & oil then to this add mango pulp, milk, buttermilk, vanilla,  and mix well.
  • In another small bowl, combine flour, baking soda, baking powder & salt mix and now add this flour mixture to the mango-milk mixture and mix until everything combine well.
  • Now take a small cup, add cocoa powder & 2 tsbp warm water and mix well.
  • Then transfer half of the mango batter to another bowl and add this cocoa paste and combine well
  • Now both ur mango batter & chocolate batter are ready.
  • Then to the lined loaf pan, add mango n cocoa batter alternatively like a checker board pattern or simply fill with vanilla batter then add remaining cocoa batter in 3 small circles, make swirls as u like.
  • Tap the pan gently to set the batter evenly and bake it for 50-55 minutes or until done(check by inserting a knife or toothpick which should come out clean).

Mango Chocolate Marble Cake - Egg & Butter Version

Ingredients
  1. All Purpose Flour     1 and 1/4 cup
  2. Baking Powder    1 tsp
  3. Sugar         3/4 cup
  4. Cocoa Powder, unsweetened      1/4 cup   
  5. Egg    2 no.s
  6. Butter, melted      1/2 cup
  7. Buttermilk     1 cup
  8. Mango Pulp/Puree     1 cup
  9. Vanilla Extract    1 tsp
  10. Chocolate chips     1/4 cup(mixed with 1 tbsp flour - optional)

Method
  • Preheat the oven at 350 F. Line & grease your cake pan - loaf pan, round pan anything of ur choice and keep aside.
  • In a mixing bowl mix together sugar, flour and baking powder and Keep aside.
  • In a separate large bowl, roughly beat the eggs with the help of a whisk or a fork(do not beat for long time, just mix it fork or whisk is enough).
  • Then add melted butter to the eggs and mix lightly.
  • After that add mango pulp and buttermilk to the egg mixture and mix lightly till everything is combined.
  • Now slowly add the flour mixture and mix with a wooden spoon.
  • Lastly stir in chocolate chips and vanilla extract and mix well.
  • Pour half of the prepared mango batter in the baking pan. To the remaining half add the cocoa powder and mix with a spatula/spoon. Pour the chocolate batter over the plain mango batter and with the help of a toothpick lightly swirl the batter around a few times.
  • Bake for 55-60 minutes or until a toothpick comes out clean upon inserting in the center of the cake. Cool completely on a rack before serving.

Notes:
I did a marble loaf cake but u can very well make marble bunt cake, marble muffins, zebra cake cake also.
Adjust sugar in both the recipes if using sweetened mango pulp to 1/2 cup or less than 3/4 cup.
You can also use fresh mango pulp. Scoop out the pulp from the mangoes and blend it nicely and use it in the recipe.
**Instead of 1/4 cup milk n 1/4 cup buttermilk u can also use 1/2 cup milk alone. second time I did like that.

  23. Hey Sangeetha, I just baked ur cake. It is sitting on my counter cooling right now. I can tell from the batter it is awesome. Also, it rose to almost double. Thanks a lot dear

  25. hi sangeetha! i tried the eggless version of this cake n it came well. but when i tried the egg version the cake was very dense n no rise was there. i tried it twice but failed everytime. can u plz help me out. looking forward to your response. thanks

      Sorry for the delayed response. Thanks for trying and sharing your feedback. I haven't tried the Egg version. But some of my blogger friends have tried and they got it perfect. I think 1 cup mango puree is more and we can reduce it to 1/2 cup. I will try to bake it soon and let you know.
