Vegetable Chalna / Veg Chalna

Today's Post is a special post, a virtual Celebration post to give a surprise treat to one of my dearest friend and a well know Blogger, Divya Pramil of You Too Can Cook who is celebrating her birthday today. Blogging had changed my life and brought so many wonderful memories and new frenz relations to me. I never thought that the virtual friends which i came to know via blogging will become a part of my life but it happened with some of my blogger friends who really luv and care for me and am more comfortable with them to share everything with them, family, personal, GK, cinema, photography, cooking and of course blogging. One such friend is Divya Pramil, within a short time we get close each other with true luv and care. Very encouraging and supportive person, I really so happy to do a special post for her and Wishing Her a Very Happy Birthday...

We a group of friends wanted to Celebrate Divya's Birthday virtually to give her a surprise treat, So for that we picked few recipes to try from Divya's You Too Can Cook blog and post it in our blog on her b'day, July 3rd 12.00 am. I tried her Vegetable Chalna, Egg Chapathi, Arachivitta Kozhi Kuzhambu, Apple Lemonade. All the recipes turned out so good, tasty & delicious. My family loved it, Thank You so much Divya for such easy & tasty recipes. Keep up your good work & wish u all success in all ur endeavor.
Now coming to the recipe Vegetable Chalna / Veg Chalna, a popular Tamil Nadu Hotel's Vegetarian curry which is served with Parotta/Layered Flat Bread. I love veg chalna & parotta a lot and was looking for the recipe long time. And while browsing on her Recipe Index am happy to see this recipe and immediately tried it with slight variation. The chalna was so yummy, flavorful and tasted similar to that of the hotel style Chalna. So if u are a fan of Hotel Veg Chalna, then its a must try recipe for u. Give it a try and let me know how it turned out to u. Now off to the recipe...



Ingredients
  1. Mixed Vegetables      2 cups chopped (i used carrot,beans,peas,potato,capsicum)
  2. Onion     1 medium (finely chopped)
  3. Tomato    2 no.(chopped)
  4. Ginger Garlic Paste    2 tsp
  5. Turmeric powder     1/4 tsp
  6. Cilantro     1 tbsp(finely chopped)
  7. Mint leaves    1/2 tbsp (finely chopped)
  8. Green Chillies     2 no.s(slit open)
  9. Salt    to taste
To Temper
  1. Oil      2-3 tsp
  2. Mustard seeds    1/4 tsp
  3. Fennel seeds     1/4 tsp
  4. Cumin seeds   1/4 tsp
  5. Clove   2 or 3 no.s
  6. Cinnamon    2" stick
To Wet Grind
  1. Coconut    1/4 cup (shredded)
  2. Red chilli Powder     2 tsp or to taste
  3. Pearl onions/Chinna vengayum     2 no.s (try to use small/pearl onions for real taste)
  4. Khas Khas/Poppy seeds    1/4 tsp
  5. Dalia/Pottu kadalai/roasted gram dal     1 tsp or replace with 4 whole cashew nuts.

Method
  • First Wash & chop all vegetables and keep ready.
  • In a blender, take all ingredients given under the heading "To Wet Grind" and grind it to a smooth paste using 1/4 cup water or less water.
  • Now heat oil in a kadai, add the tempering ingredients one by one wait till it splutter, then add onions, curry leaves, green chilli and saute till onion turn golden brown.
  • Then add ginger garlic paste saute till raw smell leaves.
  • After that add chopped tomatoes, and saute till it turns soft n mushy.
  • Then add all the chopped vegetables stir fry for a minute and add the ground paste saute for 2-3 minutes and add enough water and salt and close the lid and bring it to boil.
  • Once it starts boiling add finely chopped mint and cilantro and cook for 5-7 minutes.
  • That's it...Tasty & Flavorful Vegetable Chalna ready. Serve Hot with Rotis/Parotta/Chapathi/Dosa.

Notes:
This chalna tend to thick upon cooling, so make it a thin gravy so that it get a perfect consistency while serve.
This chalna tastes great when its thin n watery too :)
Adjust chilli powder n green chilli to your taste.
