Kesar Pista Kulfi recipe is a summer special rich creamy ice cream that can be prepared at home easily with simple ingredients. Kulfis are nothing but a frozen treats like Ice cream but its frozen using a special molds. I am happy that Divya Pramil 's South Vs North Challenge Event is going to complete one year by next month. Yep, this is 11th challenge and so proud to be a part of this successful event. In South Vs North Challenge there are two teams, South Team, members belong to the Southern Part and North Team members from Northern Part. Every Month a member from each will Challenge recipe to the opposite teams - A South team member who is hosting will give a challenging Traditional South Indian recipe to the North team and vice versa. I belong to the Southern Team and this Month Challenge was Kesar Pista Kulfi, hosting by Shruthi while Divya of You Too Can Cook of South team challenged north team members with Paasi Paruppu Payasam.
We really enjoyed this creamy and delicious popsicle/kulfis. Thanks to Shruthi for this delicious recipe, my kids loved it a lot. This month i tried the challenge on day one itself and clicked the pictures on that day itself. Because of the hot and sunny weather, kulfi started melting and couldn't click good pictures with it.
Ingredients
- Milk 4 cups
- Condensed milk 1/2 cup
- Sugar 1/4 cup
- Cornflour 1 tbsp
- Cardamom powder 1/4 tsp
- Chopped pistachios 1/ 3 cup
- Saffron strands 1/4 tsp
- Rose water 1/4 tsp(i skipped)
Method
- First Make a thin paste with cornflour and enough milk and keep aside.
- Bring milk to boil in a heavy bottomed pan, then add condensed milk and sugar.
- Keep boiling in medium heat and keep scraping the cream from the sides of the pan, this helps to give a thick texture to the mixture.
- Keep boiling on low flame until the milk reduces to three fourth of the quantity.
- Now add the cornflour paste and keep stirring to avoid the lumps.
- The mixture will turns thick now add the chopped pistachios,saffron, cardamom powder stir well and switch off the stove.
- Finally add the rose water, give a stir.(if using).
- Let the mixture cools, pour this kulfi mixture to the kulfi/popsicle mould cover with lid and keep in freezer for at least 4-5 hours.
- Once the kulfi is completely set, just pass the mould under the tap water for a second pull the kulfi from the mould.
- Serve immediately and enjoy!!!
