Like me, my kids also love this biscuits a lot and after a way long time i made for them and they enjoyed eating and playing with this Diamond Biscuits :) As now its Diwali Occasion i wanted to share it here, so it will be useful for many to try this easy and simple, Vegan Snack. Usually this maida biscuits are done using butter or Vanaspathi/shortening but this recipe uses oil only. If anyone looking for a Vegan Diwali sweet then this is one best option, hope you like it too and give it a try...

Resting Time : 30-40 minutes
Cooking Time : 15-20 minutes(based on the frying pan/kadai size)
Makes about 2 cups.
Ingredients- All Purpose Flour / Maida - 1 cup ( i used unbleached APF)
- Sugar, powdered 1/2 cup*
- Hot Oil 5 tbsp
- Salt a small pinch(optional)
- Oil for deep frying
Method
- Mix flour, salt & sugar well.
- Heat 5 tbsp oil in a pan. When it is steaming hot, pour it into your flour.
- Using a fork or a spoon, incorporate all the flour & the oil. (do not touch because the oil is piping hot!)
- Slowly, add water little by little. Using your hands, knead it to a soft, pliable dough for 10-12 minutes. Do not add more water the dough should be little stiff, soft and pliable.
- Make sure you give a lot of pressure & knead the dough well. Let it rest for half an hour(i let it rest for an hour).
- Now Heat oil in a pan to deep fry.
- Take the dough and knead for a minute and divide it into 2 big balls.
- Using a rolling pin, roll out each ball of dough into a flat disk (12" disk) it should be medium thick not too thin or too thick
- Take a knife or pizza cutter, cut the dough into thin horizontal stripes.
- Now cut them vertically to give you small diamond shapes. Slowly, remove them from the surface & keep them in a plate or tray to fry. Repeat with the rest of the dough.
- When the oil is hot enough, add all the diamonds to the oil, turn heat to medium heat.
- Fry well on both side until they turn light brown & crisp. (Takes about 3-4 minutes).
Notes:
* Sugar - i added less than 1/2 cup and felt that sweet was perfect to us, not low or high.
And also i left the dough for 1 hour resting time.
Make the little stiff like Poori dough and knead for minimum 6-7 minutes.

Oil should be piping hot, heat the oil till fumes comes and add it to the sugar-flour mixture.
