I love sweets a lot but not all kind of sweets only a very few in my favorite list. So i never thought to make Mysore Pak but only to share here i tried it very first time. And happy that my kids loved it a lot. Except Halwa they love most of the sweets. This Mysore Pak is completely made using ghee and it just melt in mouth with lots of ghee flavor. I sliced very thinly like Kaju Katli because its loaded with ghee you can control the serving size na one is more than enough for me ;) if its thick and big definitely i don't have heart to taste it.
This is so simple sweet recipe with only 3 ingredients and also need only 20 minutes. The one and only thing you need to concentrate is the Sugar Syrup Consistency, only single string syrup consistency is needed. If u get this then making Mysore Pak is nothing, so so simple. Preparation Time : 8 minutes
Cooking Time : 10-12 minutes
Makes 15 medium slices
Ingredients
- Besan Flour/Gram Flour/Kadala Maavu 1 cup (i used 160 ml cup)
- Ghee 1 cup(3/4 cup in flour mixing & 1/4 cup while cooking)
- Sugar 1 cup
- Water 1/4 cup
- First heat a pan, melt ghee and transfer it to a bowl and in the same pan add 1 cup of flour and roast it in low-medium heat for 2-3 minutes.
- Then sift it and take it in a bowl, add 1/4 cup ghee then stir slowly to a smooth paste without lumps and now add remaining 1/2 cup ghee and mix it to a pouring consistency and keep aside.
- And now grease a plate with ghee and keep aside, do it now or you will not have time to do it later, it should be poured immediately.
- After that in a nonstick or heavy bottomed pan, add sugar and 1/4 cup water stir well until sugar dissolves and once it dissolves stop stirring and let it boil, once it started boiling check for single thread consistency by placing a drop of sugar syrup mixture in a bowl of water. If it does not disintegrate and forms a ball or you can roll a drop in between your thumb and index finger. It will form a string.
- Once the sugar syrup got the right consistency slowly pour the prepared besan-ghee mixture in one hand and stir it using other hand.
- Keep stirring constantly in low-medium heat and after 2 minutes, add remaining ghee in intervals and stir it.
- It will remain sticky and add ghee and keep stirring until it makes a ball and doesn't stick and start leaving the sides of the pan.
- At this stage switch off the stove and pour it to the greased plate.
- No need to spread it using a spatula, it spread beautifully by itself and let it rest for 5-6 minutes, then using a sharp knife cut to square/rectangle or any desired shape.
- Then after 10-15 minutes remove the cut slices, its ready to enjoy and store it in an air tight container
Notes:
Single string syrup consistency is more important,if not you will end with hard mysore pak.
Grease the plate and start your cooking.
Continuous stirring is required and also cook the entire process in low-medium heat.
Use fresh ghee, flour for best results.
I sliced it within 3 minutes that too my knife wasn't enough sharp and also i am not good in even slicing...and totally forgot to remove the slices from the plate i did it only next day morning that's why my mysore pak looking bit crumble and cracked.
So don't forget to take the cut slices after 10-15 minutes of slicing.
