Generally in Puratassi (Tamil month name) Month we do not eat any non vegetarian dishes including egg in this month. Though i am not a NV eater but i like to add eggs regularly in my diet and whenever i am lazy and run out of veggies i mostly prefer Egg Bhurji for my dinner with Chapathis. I love Egg Bhurji a lot and my kids too love it a lot and they can have a extra half chapathi with it :)
Recently watched a TV ad for Paneer. Don't remember the brand but the Ad concept was bit interesting and based on this Puratassi month. The concept was that any kind of Non Vegetarian recipes can be made with paneer instead. After seeing that my cravings for Egg Bhurji ended up with this Paneer Bhurji. I made the same way like my Egg Bhurji with some finely chopped carrots and bell pepper extra. The result was awesome but i felt this is so rich and filling than the egg bhurji and not a perfect choice for a diet people. Only kids can enjoy it without any guilt, my kids loved it a lot. If you are looking for a super quick and yummy side dish this paneer bhurji is one best choice. For low calorie and Vegan option you can simply use Tofu (Firm or Silken Tofu).
- Paneer 1 cup (crumbled or shredded)
- Onion 1 large (finely chopped)
- Tomato 1/2 (finely chopped)
- Green chilli 3 no.(finely chopped)
- Carrots 3 -4 tbsp (finely chopped)
- Capsicum/Bell pepper 3-4 tbsp (finely chopped)
- Turmeric Powder 1/4 tsp
- Red chilli Powder 1/2 tsp
- Cumin Powder 1/2 tsp
- Garam Masala Powder 1/4 tsp
- Cumin seeds 1/2 tsp
- Coriander leaves few (finely chopped)
- Salt as needed
- Oil 1 tbsp
- Crumble or shred paneer and keep covered and aside.
- Heat oil in pan, when it heated add cumin seeds allow to splutter then add finely chopped onions and green chillies and saute until it turns translucent.
- After that add finely chopped tomatoes, carrot and capsicum and stir fry until the tomatoes get soft.
- And then add chilli and cumin powder stir fry and add 2-3 tbsp water and allow to boil masala. Now add crumbled paneer turmeric powder and stir fry for a minute.
- Then add garam masala powder and finely chopped cilantro and stir fry for another 1-2 minutes and switch off the stove.
- That's it...Delicious Paneer Bhurji ready. Serve how with Rotis/Dosa/Bread.
