Eggless Oats Chocolate Biscottis / Oats Chocolate Biscotti

For this Month's Home Baker's Challenge, Priya given us four Biscotti recipes. Biscottis arenothing but a twice baked cookies, originated in Italy. These cookies or biscuits are oblong shaped and crunchy cookies. Of the Four Biscotti Recipes, I picked this Eggless Oats Chocolate Biscotti. This recipe is Priya's own creation, she had used wholegrain - oats in this Italian cookies that is very innovative and nice way to include wholegrain in kid's snack. I am happy that I tried this eggless oats chocolate biscottis, they turned out good and my kids loved it a lot. All biscottis vanished in two days and not even a small single piece left to their dad. And, yesterday again they asked for biscottis, so I am planning to bake another batch by tomorrow. Thank you Priya for this wonderful recipe and I really enjoyed this month's challenge. This is sure a keeper.
Recipe Source :  Priya's Versatile Recipe  Preparation Time : 8-10 minutes 
Baking Time : 25 minutes plus 10 minutes  Cooling Time : 10-15 minutes (after 1st baking)
Makes about : 15 - 20 biscottis.
Ingredients
  1. All purpose flour   1 and 1/2 cup
  2. Rolled Oats     1/2 cup ( i used quick cooking rolled oats)
  3. Cocoa powder   1 tbsp
  4. Salt     a pinch
  5. Baking powder   1tsp
  6. Baking soda  1/2tsp 
  7. Sugar     1/2 cup
  8. Butter (room temperature)   1/2 cup
  9. Vanilla extract   1 tsp
  10. Baking Chocolate   2 oz, melted (or you can replace it with chocolate chips)
  11. Milk     2 tbsp ( add if the dough is crumble & dry)
  12. Chocolate Chips    3 tbsp (optional)


Method
  • Take the flour,rolled oats,cocoa powder,baking soda,baking powder,salt in a bowl.
  • Meanwhile whisk together the butter,sugar until they turn smooth.
  • Add in the melted chocolate,vanilla extract and give a quick stir.
  • Now slowly add in the dry ingredients and mix everything well, if its hard to knead add milk, if its sticky, add in few flour. Lastly add chocolate chips and knead to a soft dough.
  • Preheat the oven to 350 F
  • Roll the dough as a log and transfer it to a baking sheet lined over a baking tray.
  • Bake the log for 20-25 minutes. Cool it for 10 minutes.
  • With a sharp knife, slice it diagonally as 1 inch pieces or roughly to get around 15-20 pieces from the log.
  • Bake it again for 5 minutes.
  • Flip the biscottis and bake again for an another 5 minutes.
  • That's it..Delicious Oats Chocolate Biscotti ready. After cooling completely store in an air tight box.



Notes
To Melt chocolate - Take chocolate squares in a microwave safe bowl, add 2 tsp milk and microwave in high for 40-45 seconds and use it in the recipe.
This dough will be crumble type so add milk to make it a soft dough. Do not add more milk just for binding and try kneading the dough for few minutes. This will help to get a smooth and soft dough.

  14. Nov 20 - the recipe says to add in 'the melted chocolate' - to what, is this referring.....the 'optional Choc Chips???'' or is there a missing ingredient? Or does this mean the 'cocoa powder....

    1. yes.,i missed to add it in the Ingredients, now i added. You need 1/4 cup melted chocolate for this recipe. You can use any baking chocolate or dark chocolate or chocolate chips. Melt in microwave with 2 tsp milk and use it in the recipe. Hope this helps.

  17. Hi! Thank you forthe recipe. Tried making thrm. The biscotti tastes delicious however there were cracks on the log after the first baking. What might be the reason?
