Red & Green colour is perfect for the Christmas season, that too red coloured baked goodies like velvet cakes and cookies are so beautiful and colourful treat enjoy the festive occasion. Actually I started to bake a Frosted cookies then in last minute my mind changed and decided to try this mess free and easy Red Velvet Chocolate Chip Cookies. I completely had fun baking this cookies along with my little one. He was more excited to see the red coloured dough with his favorite chocolate chip. He also helped to scoop out the dough and shaping. Baking with kids is always a fun experience only till baking, after that definitely its a troublesome job for foodies. Since kids will not have patience to wait till our photo session. Somehow I managed him and took few pictures. Overall cookies were so soft and delicious, more or less a chocolate chip cookies. My kids loved it a lot.

Chilling Time : 1 hour Baking Time : 10-11 minutes
Makes 18 cookies
- All Purpose Flour 1 and 1/2 cups + 1 tbsp
- Unsweetened Cocoa Powder 1/4 cup
- Baking Soda 1 tsp
- Salt 1/4 tsp
- Unsalted butter, softened 1 stick/1/2 cup / 8 tbsp
- Brown Sugar 3/4 cup(light or dark, i used light)
- Granulated Sugar 1/4 cup
- Egg 1 no. at room temperature
- Milk 1 tbsp
- Vanilla Extract 2 tsp
- Red colour 2 tsp (gel or liquid)
- Chocolate Chips 1/2 cup or you can add up to 1 cup
Method
- In a mixing bowl, combine together flour, cocoa powder, salt, baking soda and keep aside.
- In an another bowl, place butter and using hand mixer beat until light and creamy, about 1 minute.
- To that add brown sugar and granulated sugar and beat until combined.
- Now add egg, milk and vanilla and beat for another minute and add red colour and beat until combined well.
- After that add flour and mix everything well to a soft dough, it will be a slight sticky dough.
- Then cover the dough using cling/plastic wrap and refrigerate for an hour.
- Preheat over to 350 degree Fahrenheit. Line two medium sized cookie sheets with parchment paper and keep ready.
- After one hour refrigeration take out the dough and using 1 or 1.5 tbsp cookie scoop, scoop out dough and mold into a ball and arrange it in a parchment lined cookie sheet.
- Arrange them leaving 1-2" space and bake it for 10-11 minutes.
- After that remove from the oven and the cookies may have only spread slightly, that is ok. Simply press down on the warm cookies to slightly flatten and form crinkles.
- If you like press few chocolate chips on the top when its warm.
- Allow to cool on wire rack. Once cooled completely store it in an air tight container.
Notes:
If you have white chocolate chips you can also use it instead of the regular one.
For eggless version - you can substitute 1 egg with 1 tbsp flax meal mixed with 3 tbsp water and make a paste and use it in the recipe. But i haven't tried, just only a suggestion.
It may work or may not, try it on your own risk.
Or a milk can also be used for egg free version.

ReplyDeleteBefore baking, no need to flatten it..just bake it as small balls..after baking gently press the warm cookies.
