Baked Mathri / Baked Methi Mathri / Methi Ki Mathri


Today's recipe is a popular North Indian Snack Methi Mathri, baked version. This is the first time i am trying this snack but have tasted the fried mathri from stores. Mathri is a flavorful, delicious savory crackers and there are few varieties like Methi, Peas,Dhaniya Mathri. I tried the Methi Mathri to make it a guilt free healthy snack i baked it instead of deep frying. The baked one also turned out so good crispy, crunchy and tasty. After a long search i finally experimented with the basic ingredients for Mathri and to my surprise it come out perfectly. We all loved this crunchy crackers, perfect & guilt free munch on movie time, game time. These flavorful crackers just vanished in no time. Also this is a very easy and simple recipe you don't need to knead the dough soft & elastic, just a mixing is enough and the important thing is the dough should be tight. Doesn't need butter like regular sugar cookies just a tbsp is enough or you can even replace it with oil.
Preparation Time : 10 mins
Resting Time : 20-30 minutes
Cooking Time : 12-15 minutes
Makes about 30-35 crackers(1.5")

Ingredients
  1. Whole Wheat Flour / Atta 1 cup
  2. All Purpose Flour 1 cup (i used unbleached APF)
  3. Dry Methi Leaves / Kasoori Methi 1 tbsp
  4. Ajwain/Omam/Carom seeds 1/2 tsp(crushed)
  5. Cumin seeds 1/2 tsp(crushed)
  6. Pepper 1 tsp or to taste(crushed or coarsely ground)
  7. Salt 1/2 tsp
  8. Warm Oil 3 tbsp
  9. Melted Butter 1 tbsp
  10. Cold water 3/4 cup or as needed.
Method
  • Take oil and butter in a small bowl, and warm it in microwave oven for 45 seconds.
  • In a wide bowl add flours, dry methi leaves,ajwain,cumin seeds, crushed pepper corns, salt and mix well.
  • Then combine warm oil-butter mixture well with flour.
  • Using cold water make a stiff dough. Do not knead dough.
  • Then cover the dough with plastic wrap or damp cloth and keep aside for 20-30 minutes.
  • Preheat oven to 350 F. Line a cookie tray with foil paper and brush it with oil.
  • Divide the dough in to two half, roll the one half of the dough into less than 1/4" thick flat disc.
  • Then using cookie cutter or bottle cap/rim cut the cookies from the rolled dough.
  • Transfer the unbaked cookies to a lined baking sheet.
  • Do repeat the same with remaining dough and arrange it in baking sheet.
  • Bake for 12-15 minutes, turn the cookies half way and bake until turns crisp with light soft touch.
  • Once done transfer the baked Methi Mathri to cooling rack. Allow to cool and store it in an airt tight container.



Notes:
I used Aashirvadh whole wheat atta, adjust water to combine dough. The amount of water depends on the quality and type of flour you use. so adjust accordingly.
You can also replace butter with oil.
Use warm or heated oil/butter.
Do not knead dough, just combine well to a tight dough.
Before baking i brushed the unbaked crackers with oil and baked it.

  19. I had been thinking of trying baked mathris for quite sometime and then stumbled into your blog. The Mathris came out very well.
    We love Mathris but I don't like the frying and oil part. The baked version turned out amazing. Thanks a lot for sharing the recipe.
