Carrot Oatmeal Cookies
Oatmeal Cookies, one of my favorite cookies and i have baked them many times but never get chance to share here. I have tried both Egg and Eggless Oatmeal Cookies. Last week when my lil' one was asked for some cookies I baked this Carrot Oatmeal Cookies without egg. Though i followed a Oatmeal Raisin Cookies recipe i skipped raisins as my kids do not like raisins in cakes & cookies and instead i added shredded carrot. I have tried the same cookies with grated Apple too. Both Apple and Carrot tastes great and its nice to include some healthy stuff in cookies or cake.

Eggless Carrot Oatmeal Cookies
Ingredients
  1. Quick Cook Oats/Rolled Oats    1 cup
  2. All Purpose Flour or Wheat Flour    1 cup
  3. Cinnamon Powder   1/2-1 tsp
  4. Baking Soda   1 tsp
  5. Butter, softened   1/2 cup(or at room temp.)
  6. Brown Sugar    1/4 cup
  7. Granulated Sugar    1/4 cup
  8. Shredded Carrot    1/2 cup
  9. Powdered Flax seeds    1 tbsp (i used milled flax seeds)
  10. Water   1/4 cup
Method
Line a baking tray or cookie sheet with baking parchment.
In a small bowl, mix flax seeds and 1/4 cup water stir well and keep aside.
In an another bowl mix the flour, rolled oats and baking soda together. Then combine brown sugar and granulated sugar in a bowl.
In the bowl of a stand mixer or in a big bowl if doing by hand cream the butter and the sugar. Stir in the flaxseed mixture and mix well.
Add in the dry ingredients and mix again until well blended.
Now stir in shredded carrot and mix well.
Using 1 tbsp scoop, drop out the dough on the prepared cookie sheet.
Bake in a preheated oven at 180 C/350 F for 18 to 20 minutes or until golden brown at the edges.
Once done, allow the cookies to cool on wired rack.
Store the cookies in an air tight container, the cookies stays good in room temperature for 5 days. 

Notes:
To the Same Recipe, instead of carrot you can also use 1/3 cup sweetened coconut flakes, if so reduce 2 tbsp sugar.
You can also some chocolate chips or nuts to this recipe.
I added scant 1/4 cup of brown sugar and granulated sugar, the cookies were mild sweet and perfect for us.
Use 1 tbsp scoop or divide in to small balls and flatten lightly using back of the spoon.
I used unbleached All Purpose Flour.
For this recipe if you want to try it with Egg then use 1 large egg.

  6. Sometime back I had come across a carrot cookie recipe which had eggs. I made an eggless version, but the cookies didn't turn out that well. Your look so crunchy and yummy. The hunt for the recipe has ended for me. :)

    1. Cookies were both crunchy and chewy - outer part is crunchy and the center part is mild chewy. Plz try it sometime, very delicious and addictive cookies...
