Chocolate Coconut Cake / Eggless Chocolate Coconut Cake / Chocolate Cake with Lindt Dark!

Chocolate Coconut Cake
Early this month weather was too cold only 40 F or less but from this week weather is good and its Fall now here. The leaves turning golden yellow to orange red and in some plants i could able to see nice pink tinges. Its less colorful compared to Wisconsin but still looks pretty and pleasing. After a long time i turned on my oven this week and baked cakes and cookies for my family. Fall and winter are the right time to bake more, so that our house gets warm and also we could enjoy the yummy goodies at home.

For this month's Shh Secretly Cooking Challenge i was paired with Veena of Great secret of Life and she gave me Chocolate and Coconut as my secret ingredients. Both are my favorite ingredients and i couldn't prevent myself from baking. After a long thought i decided to bake a cake with the given ingredients. I already have baked a Vegan Muffins with this chocolate and coconut combo, Chocolate Coconut Muffins. This time baked a rich buttery and chocolatey cake. I slightly tweaked this recipe, also i used lindt 90% cocoa Dark Chocolate and the cake was so flavorful and mild sweet. The chocolate dominated more and there was no coconut flavor but I could taste the coconut in every bite. This chocolate coconut cake is perfect tea time or snack cake, the mild sweet and
rich chocolaty cake pairs well with a cup of coffee or milk.


Eggless Chocolate Coconut Cake

Preparation time : 10-15 minutes Cooking Time : 25-30 minutes
Makes about 8 medium squares

Ingredients
  1. All Purpose Flour   1 and 1/2 cup
  2. Baking Powder    3/4 tsp
  3. Butter, softened    1/3 cup
  4. Oil    4-5 tbsp(i used extra light olive oil)
  5. Brown Sugar   1/4 cup(light or dark)
  6. Condensed Milk   1/4 cup
  7. Milk   3/4 cup
  8. Desiccated Coconut   1/2 cup
  9. Grated Dark Chocolate   1/2 cup(i used lindt 90%)
  10. Vanilla extract    1 tsp


Method
  • Sift flour with the baking powder and keep aside.
  • In a bowl, beat butter and then add brown sugar and beat until light and fluffy.
  • Then add condensed milk and mix well.
  • And then add milk, oil mix it, then stir in with desiccated coconut, chocolate and vanilla. 
  • Now add the flour-baking powder mixture and fold in gently.
  • Then pour the cake batter to the prepared cake pan.
  • Bake in pre heated oven at 360 F for 25-30 minutes or until inserted tooth pick comes out clean.
  • Once done, remove from the oven and cool it in a wired rack.
  • Then slice and enjoy with coffee.

Notes:
Here i used lindt dark, you can use any desired or your favorite dark chocolate.
If you want you can skip coconut and bake it as a plain chocolate cake also.
I cut cake when its hot, so it looks very moist but after cooling the cake texture was perfect and even the next day it tasted do yummy and flavorful.
6 inch cake pan would be fine for this recipe.
I used homemade condensed milk.

  13. When to add oil mam? It is not mentioned in the procedure. Will it be a dense cake?
