For September Month's We Knead to Bake, we were given the choice to bake Pizza but different from the usual one. I usually bake Veggie Pizza at home or sometimes Pizza with spicy Indian style toppings. This time I decided to try Vegetarian Mexican Pizza. A simple and healthy version of Mexican Pizza with Curried Black beans, Medium spicy Salsa, Colored Peppers, onion, tomato & cilantro topping.
Pizza with curried black beans topping turned out so good and filling. My kids loved it too and I was happy that they had some curried beans in pizza form. After referring more recipes on net, I customized the topping to my taste. I used this recipe for the pizza base and this time made center portion as thin and the edges thick crust.

- Pizza Base
- Cooked Black Beans 1 cup
- Canned Salsa 1/2 cup or as needed
- Onion 1 medium(sliced or diced)
- Tri Colored Bell Pepper 1/4 cup each(sliced or diced)
- Tomato 1/2 medium(chopped or diced)
- Fresh Pico de gallo as needed
- Cheese 3/4 cup or as needed
- Taco Seasoning 1/2 tsp
- Chilli Powder 1/2 tsp
- Cumin Powder 1/2 tsp
- Garlic 1 fat clove(crushed)
- Prepare the dough as per this recipe.
- Soak black beans(1/2 cup) over night and next day pressure cook with enough water for 3-4 whistles.
- Once the pressure cools down drain the excess water and retain little water to the beans, slightly mash it with a fork and to the
- cooked beans add crushed garlic, chilli powder, cumin powder, salt, mix well and cook for 4-5 minutes in medium heat and switch off the stove and allow to cool.
- You can cook beans ahead and use it as needed.
- Preheat oven to 450 F. Dust cast iron pan or pizza stone with cornmeal.
- Then shape the dough into square or round pizza.
- And bake in the oven for 3-4 minutes and the remove from the oven and add toppings.
- First spread the cooked black beans and then spread canned salsa(i used store bought salsa).
Notes:
- And then top it with fresh sliced bell peppers,onion, tomato, cilantro, taco seasoning.
- Then top it with cheese, and bake it for 15-20 minutes or until crust turns light golden brown.(I added little cheese with toppings and after 10 minutes of baking added the remaining cheese and baked for another 6-7 minutes.)
- Once done, remove pizza from oven top it with fresh pico(optional), slice and serve warm.
You can use any desired vegetables, avocado, guacamole or any desired Mexican style topping.
Use Whole Wheat Pizza Base too.
Baking pizza base before adding toppings makes it cook evenly, prevent the base soggy since we are adding 2 toppings - canned salsa and curried black beans.
You can also add some 1/4 cup finely chopped onions to the beans and cook it.
