Today's recipe is a healthy, delicious and Vegan One Pot meal with Quinoa and vegetables - Quinoa Capsicum Pulao. More than Millet I love Quinoa and including it in my diet regularly. This time experimented the Indian way as One Pot Meal and it turned out so good. When Hema of Aromatic Cooking, gave me the two secret Ingredients,Capsicum and Cashew nuts for Shh Cooking Secretly Challenge Event, an event by Priya, I wanted to make some rich cashew tomato curry sauce with Mushrooms but then decided to go with simple cooking and prepared this Quinoa Pulao with both the Ingredients in it.
Quinoa Capsicum Pulao RecipePrep time : 5-10 Minutes | Cook Time : 15 MinutesServes 1 generously.Ingredients
To Temper
- Quinoa 1/4 cup
- Onion 1/4th of a medium sized onion(sliced thinly)
- Peas 2 tbsp(fresh or frozen)
- Capsicum less than 1/4 cup(diced)
- Purple Cabbage/Cabbage 1/4 cup(cut lengthwise)
- Lemon Juice 1 tsp
- Ginger 1/2" piece(crushed)
- Garlic 2 clove(crushed)
- Green Chili 2 or 3(slit open)
- Turmeric Powder a gnerous pinch
- Salt to taste
Method
- Oil 1/2 tbsp
- Clove 2 no.
- Cinnamon 1/2" stick
- Bay leaf 1 small
- Cashew nuts 5 no.
Notes:
- Rinse quinoa using a strainer and soak it with enough water and keep aside.
- Then chop vegetables, crush ginger and garlic and keep ready.
- Now heat oil in a pan, add the tempering ingredients one by one let it fry well.
- Then add crushed ginger and garlic, dry mint(a generous pinch) saute it and then add sliced onion and saute for half a minute.
- And add cabbage stir fry for a minute.
- Then add 1 cup water,lemon juice, peas, salt and bring it to boil.
- Mean while, in an another pan, heat few drops of oil and saute diced capsicum for 1-2 minutes and turn off the stove.
- Once the water started boiling, add soaked and drained quinoa, mix well and cook till done.
- Then add the roasted capsicum, fluff quinoa gently and cover the pan with lid and let it rest for a minute.
- That's it...Quinoa Capsicum Pulao ready. Serve hot with Raita!
The same way instead of Quinoa you can use any millets or brown rice or basmati rice or any cooking rice. Only add water according to the grain you use.
I had some purple cabbage so used it in the recipe, you can add the regular one or skip it.
I don't have fresh mint so I used dry Mint.
