Today I am here with an easy Christmas special recipe, Shortbread Bites / Christmas Shortbread Cookies. Shortbread are kind of biscuits with mild sugar and rich buttery cookies. No eggs needed and just 3 basic ingredients is needed for a plain Shortbread cookies. Shortbreads are easy and simple to make, just mix butter, sugar and flour freeze the dough, cut out and bake. Christmas Shortbread Bites RecipeRecipe Source : Mrs.Happy HomemakerPrep Time : 30 minutes | Bake Time : 18-20 minutesMakes 2 to 2.5 dozenIngredients
- All-purpose flour 2and 1/2 cups
- Sugar 1/2 cup
- Cold butter 2 sticks(1 cup) cut into small pieces
- Colored nonpareils or sprinkles 3-4 tablespoons
- Vanilla Extract 1/2 tsp
- Cold Milk 1/2 tbsp*(optional)
Method
Notes:
- You can do this In food processor or by hands,
- IF using Food Processor, with knife blade attached, pulse flour and sugar until combined. Add butter and pulse until dough begins to come together. Place dough in a large bowl.
- With hand, gently knead in nonpareils or sprinkles until evenly blended and dough forms a ball.
- If doing by hands, Just pulse flour and sugar in a mixer jar for once and then transfer to a bowl, add cut pieces of cold butter and mix it gently without melting the butter, it should like a crumbled dough add vanilla and milk(only if needed), combine well and add sprinkles and blend evenly and form a smooth ball.
- Then On lightly floured wax paper, pat dough into 2 equally sized rectangles; wrap it and freeze 20 minutes.
- Preheat oven to 325 degrees.
- Cut dough into 1-inch squares. Place squares, ½ inch apart, on an un greased large cookie sheet.
- Bake cookies 18 to 20 minutes or until lightly browned on bottom. Transfer cookies to wire rack to cool.
- Store cookies in tightly covered container at room temperature up to 1 week, or in freezer up to 3 months.
*Milk - adding milk is optional, i felt the dough was bit crumbly and not binding so i added milk.
If using processor then the mixing is done better than by hand, so adding milk is optional and add only if needed.
You can also make it as plain shortbread bites.
Freezing dough is must or refrigerate for 35 minutes.
Use cold butter and cut into thinly slices or small pieces makes the job easier.
These shortbread bites are mild sweet and are perfect with the sprinkles.

I Used standard measurement cups.

2 and 1/2 cup flour - 320 gm

ReplyDeleteSame time and temperature, may be 1-2 minutes ahead. but try to add 1-2 tsp extra sugar !
