Roasted Broccoli Soup Recipe
Oven Roasted Broccoli Soup / Vegan Broccoli Soup Recipe. I wanted to try Broccoli Soup since long time but most of the recipe uses either milk or cream. I do not like milk or cream based soups and V too. So bit hesitated to try soup with milk. Earlier this month saw this Roasted Broccoli Soup on Foodgawker site and the recipe does not require any milk or cream and also it is simple and healthy. Immediately after making Homemade Vegetable Stock, I tried this soup and loved it to the core. Roasted broccoli flavor was too good and without milk and cream the soup got nice creamy texture due to the addition of potato. I added 1/2 of a medium potato and the result was awesome. I also tried Carrot Soup the similar way(recipe coming soon) Here I made it Vegan using olive oil for sauteing but you can also use butter. Now off to the recipe...

Broccoli Soup Recipe
Roasted Broccoli Soup

Serves  3
Ingredients
For Roasting Broccoli
  1. Broccoli   1 medium sized crown, chopped into small florets
  2. Olive Oil  1 tbsp or less
  3. Fresh ground black pepper   1/4 tsp or to taste
  4. Salt  to taste
For Soup
  1. Oil   1/2 tbsp
  2. Onion   1/2 medium(finely chopped)
  3. Garlic   1 or 2 fat clove(finely chopped)
  4. Potato   1 or 1/2 medium potato(diced)
  5. Vegetable Stock   3 cups
  6. Salt & Pepper   to taste
Method
  • Wash broccoli crown, drain and chop into small florets.
  • Preheat oven to 475 degrees. 
  • Heat 2 tablespoons olive oil in a cast iron skillet (or other oven-proof skillet) over medium heat. Add in broccoli, salt and pepper and toss to coat. 
  • Place in preheated oven. Cook for 10 minutes. Stir and cook for another 10 minutes or until tender. Remove from oven. 
  • Heat oil or butter in a sauce pan, add onion saute nicely till light golden brown.
  • Then add garlic and fry well and add diced potato and saute for a minute.
  • Now add roasted broccoli and 3 cups of broth/stock and cook in medium heat for 25 minutes.
  • Once the potato turn soft and tender, turn off the stove and allow to cool for a while, or blend it using hand blender.
  • Or cool for a while and grind it in a mixer to smooth and transfer to pan and add salt and pepper to taste and simmer for 4-5 minutes.
  • That's it...Delicious Broccoli Soup ready. Serve warm with any crispy bread.
Notes:
You can also use Store bought stock or broth, but making veg stock at home is very simple and free from preservatives.
Instead of oven roasting, you can also grill it or toast it in tawa on stove top.
You can either blend portion of a soup or blend everything.

  4. Its very cold here in Gulf. Made the soup with homemade veg stock (your receipe). Delicious. I too do not like to use milk or cream in soup. Garlic flavour was good for this soup with boil potatoes. Thanks...
