Vella Sevai | Sweetened Idiyappam With Jaggery & Coconut Recipe with step by step photos. Idiyappam and Thengai Paal is my most favorite Idiyappam combo recipe. But V do not like Idiyappam with sweetenend Coconut milk instead he loves it with Jaggery Syrup. So whenever I make Idiyappam, I make a thin jaggery syrup and peanut sesame powder for him. But this time for a change, I prepared a thick sauce and stirred with idiyappam and served. He liked it but said the sweetness was less. So I added more jaggery sauce for him and we three have it with mild sweet.
This Vella Sevai is delicious and equally healthy breakfast or after school snack for kids. My kids loved it a lot. Steamed foods are generally healthy and instead of rice flour, you can use Red rice flour or Ragi Flour or Wheat Flour or Millet Flour to make Idiyappam. Next time I am planning to try with wheat flour/Atta.

Method
- Idiyappam/Steamed Rice Noodles 2 cup
- Jaggery 1/2 cup
- Coconut,shredded 2-3 tbsp(fresh or frozen)
- Cardamom powder a pinch
- Sesame Peanut Powder 2 tbsp or as needed(optional)
- Prepare Idiyappam as per this recipe.
- Once done allow it cool and loosen the strings and break into tiny noodles.
- Then in a small pan add jaggery and 1/4 cup water and stir well and until jaggery dissolves.
- And then filter the jaggery syrup and pour back to another wide pan or kadai.
- Cook it in medium heat until jaggery thickens.
- When the syrup turns slightly thick to half string consistency, then add shredded coconut and mix well and cook for another 2 minutes.
- Lastly add cardamom powder, stir well and switch off the stove.
- Allow the syrup to cool down for a while, after cooling mix the syrup with Idiyappam.
- Add sesame peanut powder if desired and serve immediately.
- If required, you can also add some ghee roasted cashew nuts and raisins to Vella Sevai.
