Easy, healthy and delicious Restaurant style Sweet Corn Vegetable Soup Recipe with Step by Step Photos. I always love simple and clear soups than the blended/creamy soups. I often make Cabbage clear soup for me, it is like a diet soup. Except me no one likes that cabbage soup so for them I made this restaurant style Clear Soup with Sweet corn, Mixed vegetables & green onion(spring onion). It turned out good and even my kids loved this soup.
This is a mildly spiced, light soup loaded with fresh vegetables. You can add any vegetables of your choice, here I used Sweet corn, carrots, beans, cabbage, green onion. Like my other soup recipes, here also I used Homemade Vegetable Stock/Broth but you can use store bought or plain water too. But try to make it vegetable stock. Making stock at home is so simple and easy, if interested checkout my Vegetable Stock recipe. This time, I added a small piece of Cinnamon to my stock and the cinnamon flavor was well incorporated with the stock and the soup was flavorful and healthy too.

Method
- Sweet Corn 1/2 cup
- Onion 1/2 medium(finely chopped)
- Spring Onion white(white portion of spring onion) 2-3 tbsp(finely chopped)
- Carrot 4 tbsp (finely chopped)
- Beans 2-3 tbsp(finely chopped)
- Cabbage 1/4 cup(finely chopped, length wise)
- Garlic 1 clove(finely chopped)
- Vegetable Stock/Broth 2-3 cups
- Fresh ground pepper 1 tsp or to taste
- Corn flour 2 tsp(dissolved in 1/4 cup water)
- Salt to taste
- Sugar 1/4 tsp
- Oil 2-3 tsp
- Heat oil in a sauce pan, when it is hot add green onion white part, onion, garlic and saute until onion turns light golden brown.
- Then add carrot, saute for a minute.
- After that add finely chopped cabbage stir well and then add beans, sweet corn saute for a minute.
- Then add ground pepper, salt, sugar and give a nice stir and add vegetable stock, check salt and spice.
- And bring it to boil and cook till the veggies are soft and tender, do not over cook. Veggies needs to be slightly crunchy.
- Now add corn flour water mix, stir well and simmer for 3-4 minutes and switch off the stove.
- That's it..Simple and healthy Sweet Corn Clear Soup ready. Serve Hot with generous fresh ground pepper on top and some finely chopped green onions.
Notes:If you like, you can also add 1/2-1 tsp green chilli sauce or chilli garlic sauce along with pepper and saute it before adding broth or water.
Clear soup is so comforting.. I always rely on quick detoxing.. yum!
