Try to use fresh Methi leaves for good taste and flavor. I used homegrown fresh methi leaves, as it was too tender and fresh I used the whole plant, just trimmed the root and finely chopped the plant and used it to make Methi Thepla. If using store bought methi bunches, just use leaves alone.

Method
- Whole Wheat Flour/Atta 1 cup
- Gram Flour/Besan Flour 1/4 cup
- Methi Leaves 1/2 cup(finely chopped)
- Turmeric Powder 1/4 tsp
- Chilli Powder 1/2 tsp
- Garam Masala Powder 1/4 tsp(optional)
- Ajwain seeds/Omam 1/4 tsp
- Hing 1/4 tsp
- Salt to taste
- Sugar a pinch
- Oil or ghee to toast rotis
- Wash methi leaves and drain excess water and chop finely and keep ready.
- In a mixing bowl, add atta, gram flour, spices,salt, sugar, ajwain seeds and mix well.
- Then add methi leaves mix well and using water little by little knead it to a soft and smooth dough.
- Because of the addition of gram flour, the dough tend to be slightly sticky but you can use little oil to smooth the dough and allow the dough to rest for 20-30 minutes.
- After that divide the dough into 6 equal portions.
- Take one portion, shape it to a ball and using a greased or floured surface roll it to 8" disc.
- Repeat the same for remaining dough, once done heat tawa to cook rotis.
- When the tawa is heat, place the rolled disc When you see small bubbles flip other side and smear some oil or ghee on the upper surface.
- Let it cook for a minute then Flip and spread some oil on the other side as well. Cook theplas until you get nice brown spots on both sides.
- Once done Thepla is ready, take it off from tawa. Serve Hot with pickle, curd or any desired curry or sabzi.

ReplyDeleteFill a pot with potting mix, then sprinkle methi seeds randomly and then sprinkle some more potting mix to slightly cover the seeds. Then sprinkle some water. That's it...seeds will start to sprout within 2 days and by 2 weeks it will be ready for harvest. Hope this helps!
