Method
- Aval/Poha 1 and 1/4 cup(i used thick poha variety)
- Sugar 1/2 cup
- Homemade Ghee 1/4 cup
- Cardamom 2 or 4 no.
- Cashew Nuts 10 no.(chopped)
- Heat a pan and dry roast Poha in low-medium heat stirring continuously until flavor comes and it turns light golden brown colour. (5-6 minutes).
- And allow the roasted poha to cool for a while then grind it to a fine coarse powder(fine rava consistency).
- Then in a blender, blend together cardamom seeds and sugar to a fine powder and keep aside.
- After that heat ghee in a pan and roast chopped cashew nuts and roast till golden brown.
- And now in a wide plate or bowl, add ground poha/aval, powdered sugar and mix well.
- To this add ghee everything well, i did by adding ghee little by little and shaped it.
- First tightly press the mix to hold well and then immediately shape it a round balls/ladoos.
- That's it..Aval Laddo ready.
Notes:I used less ghee than the mentioned amount and used couple of tsp of warm milk to shape the ladoos.Aval Ladoo prepared using ghee alone makes it more flavorful and gives more shelf life.To the same recipe, you can also add some roasted and powdered almond powder or pistachio powder for even more rich taste and flavor.You can also skip cardamom and use kesar/saffron for flavor.
Because of the Organic Natural Pure Cane Sugar, the color of the ladoos were dark. If you use regular white granulated sugar you will get light white colored ladoos.
