Method
- Maida/All purpose flour 1 cup(i used unbleached APF)
- Red chilli powder 3/4 - 1 tsp
- Turmeric powder a pinch(optional)
- Baking Soda a pinch
- Cumin seeds 1/2 tsp
- Omam/Ajwain seeds 1/4-1/2 tsp
- Salt to taste
- Oil 1.5 tsp + to deep fry
In a mixing bowl, add all the ingredients except oil and mix well.
Then add 1 tsp oil and mix the oil well with the flour-spice mix.
And then using water made it to a soft and stiff dough like poori dough.
Once done, cover the dough with damp cloth or plastic wrap and let it rest for 10 minutes.
After the resting time, heat oil in a kadai to deep fry the biscuits.
Take the dough and knead for a minute and divide it into 3 equal balls.
Using a rolling pin, roll out each ball of dough into a flat disk (10" disk) it should be medium thick not too thin or too thick.
Take a knife or pizza cutter, cut the dough into thin horizontal stripes.
Now cut them vertically to give you small diamond shapes. Slowly, remove them from the surface & keep them in a plate or tray to fry. Repeat with the rest of the dough.
When the oil is hot enough, add all the diamonds to the oil, turn heat to medium heat.
Fry well on both side until they turn light brown & crisp.
Once done, remove from the oil using slotted spatula and drain the excess oil in paper towel.
That's it..Crispy & Crunchy Savory Maida Biscuits Ready. After cooling completely store it in an air tight container.
Notes:
For less spicy biscuits, add 1/2 tsp chilli powder.
You can also use butter or ghee instead of oil to mix with the flour.
