This is one of our family's favorite side dish for rotis and I often make this for lunch box along with Phulka. This sabzi is very easy to make except chopping green beans. If you have helping hand like me yes.,V did this job for me. Most of the time he only chop green beans and okra the previous night. So that it will be helpful for me to cook both breakfast and lunch in the morning.

- Potato/Aloo 2 no.(peeled and chopped into big pieces)
- Green Beans 1 lb or 400 gm(finely chopped)
- Onion 1 big(finely chopped)
- Tomato 1 no.(finely chopped)
- Garlic 2 cloves(crushed)
- Ginger 1 tsp(finely chopped)
- Turmeric Powder 1/4 tsp or more
- Chilli Powder 1/2 tsp
- Cumin Powder 1/4 tsp
- Hing 1/4 tsp
- Punjabi Garam Masala 1/2-3/4 tsp
- Cilantro few finely chopped
- Salt to taste
- Oil 1 and 1/2 tbsp
- Cumin seeds/Jeera 1/4-1/2 tsp
Chop green beans and potato to desired size.
If desired steam cook green beans for 7-9 minutes.
Heat oil in a pan, add jeera let it splutter then add crushed garlic fry well till it turns golden brown
And then add finely chopped onion saute until it turns golden brown and add finely chopped tomato and finely chopped ginger saute till tomato turns mushy.
After that add peeled and chopped potato, turmeric powder saute well then add 1/3-1/2 cup water and cook covered until potato cooks tender.
Then add steam cooked green beans, chilli powder, Cumin powder, hing and stir fry well and cook covered for another 2-3 minutes in medium heat.
Lastly add garam masala and cilantro mix well and simmer for a minute.
Thats it..Flavor and Delicious Aloo Beans Sabzi Ready.
Notes:
If you are adding green beans directly to the sabzi, add couple of tbsp of water and cook till it is done.
You can also cut the potatoes into small diced pieces.
I used Red potato you can use gold or Idaho potatoes.
