But for a quicker version you can use Canned Beans. I always soak beans, peas, chickpeas and freeze them for later. - Flour Tortillas 2 no.
- Cooked Red Beans 1/2 cup(you can use canned beans too)
- Cumin Powder 1/2 tsp
- Salt to taste
- Crushed Black Pepper to taste
- Onion 1 small(sliced)
- Bell Pepper 1/4 cup(sliced)
- Oil 1-2 tsp
- Shredded Cheese 1/2 cup
I used pressure cooked beans, for that soak red beans for 8 hours and pressure cook with enough water for 2 whistles.
Wait till pressure cools down and open the lid and drain water and to the hot beans add salt and cumin powder mix well and slightly mash the beans and keep aside.
Heat a griddle or tawa, drizzle some oil and spread onions and bell pepper sprinkle salt and crushed pepper and cook for 2 minutes and transfer to a plate.
Then clean the griddle with a wet paper towel and heat in medium high heat.
To the same hot griddle/tawa, smear the griddle with oil or butter then place a flour tortilla and spread beans then add roasted onion and bell pepper finally add cheese, fold the other half the tortilla over it.
And cook for a minute and flip other side cook for another 1-2 minutes.
Then remove quesadilla from tawa and cut into 2 halves and serve immediately with salsa or sour cream.
Notes:
You can use black bean or pinto or any desired beans.
Use canned beans for a quicker and instant meal option.
You can also spread the filling in the tortillas, fold and cook in a hot griddle on both sides and serve.
Use Monterey Jack Cheese or Mexican cheese Mix or any desired cheese, I used Mozarella Cheese.
