Kothu Parotta is a popular South Indian recipe particularly in Tamil Nadu. This is a nothing but a minced parotta/layered flat breads sauted with onions, tomato, spices, eggs and with Chalna/Salna. The salna can be vegetarian or non-vegetarian. Here, I used Chicken Salna and it turned out so yummy and flavorful. The taste was much better than the Hotel Kothu Parotta.
Kothu Parotta is my mom's favorite food too, few months back I made this kothu parotta for our Sunday Lunch and I shared this pictures with my Mom on whatsapp. After seeing the pictures she said that she felt hungry and the kothu parotta looks so tempting, she also liked my presentation and pictures and appreciated me a lot. She also said, that the color of the kothu parotta was just same like Selvi Mess Kothu Parotta. Selvi Mess is one of the popular Non-vegetarian Hotel in my Home town.
Even for a simple things I do or cook, she appreciate me a lot and make me feel proud about myself.

Ingredients
- Parotta(Fresh or frozen) or Left over Chapathi 4no.s
- Egg 2 no.s
- Onion 1 big (thinly sliced)
- Tomato 1 medium (finely chopped)
- Green chilli 1 no.s(finely chopped)
- Ginger garlic paste 1/2 tsp(optional, I skipped)
- Mustard seeds 1/2 tsp
- Fennel seeds 1/4 tsp
- Curry leaves few
- Chilli powder 1tsp
- Turmeric powder 1/4 tsp
- Freshly ground pepper 1/2 tbsp or to taste
- Chicken Salna or Vegetable Chalna 1 ladle(optional)
- Salt as needed
- Oil 1 tbsp
Method
- I used Homemade Parottas, if using frozen parotta thaw the frozen parotta, heat a tawa/griddle toast it on both sides and allow to cool for a minute.
- Then Cut the parotta in to small pieces using kitchen scissor and keep aside.
- Heat oil in a wide pan and add mustard seeds & fennel seeds,allow to pop.
- Add onions, curry leaves and green chillies sprinkle 1-2 tsp pepper powder, little salt and saute well.
- Then add ginger-garlic paste and saute till the raw smell leaves.
- Now add chopped tomatoes and saute well and then add the parotta pieces and stir fry for a minute.
- Then add dry powders and mix well. Now Move this to the side of the pan, crack and pour the eggs. Scramble gently and let it cook for a minute.
- After that combine everything together, scrambled eggs-parotta and stir fry for a minute.
- Now add a ladle full of Chicken Salna or Vegetable Chalna and stir fry in medium high heat for 2 minutes.
- Lastly add pepper powder, some curry leaves and coriander leaves, give it a stir.
- That's it..Kothu Parotta ready. Serve hot with raitha or non-veg curry.
Notes:
I did not use ginger garlic paste as I used Chicken Chalna that flavor itself enough for the kothu parotta.In the step wise pictures, I added Eggs first and then added parotta pieces but follow the method in description, that is first add parotta pieces, dry powders saute well then add eggs.You can also use Chicken Kuzhambu or Mutton Kuzhambu to make Kothu Parotta.
