Sabudana Khichdi Recipe
Sabudana Khichdi or Sago Pearls Khichdi is one of the easiest and simplest fasting food/Vrat Ka Khana. I love any kind of upma - rava, aval, javvarisi. My Mom makes javarisi upma just like Aval Upma/Poha with lots of onion and she never knew about this khichdi with potato. This sabudana khichdi was introduced to me by my Friend. During Mondays she observe fasting and she eats only one meal and it has mostly Sabudana Khichdi.

I am sharing the recipe that she shared with me and whenever I observe Somvar Fast I make this for myself along with Lauki ke Raita, Kadi Aloo & Sabudana Kheer.  This Monday I made this sabudana khichdi and took some pictures to share here. This khichdi is so easy to make and a very delicious and filling meal and can be taken during fasting or non-fasting days.

Sabudana Khichdi Recipe
Prep Time : 1 and 1/2 hr | Cook Time : 10 Minutes
Recipe Category : Main Course | Recipe Cuisine : Indian
Serves 2

Ingredients
  1. Sabudana/Sago Pearls/Javvarasi  1 cup
  2. Aloo/Potato   1 medium(chopped into small pieces)
  3. Jeera/Cumin Seeds    1/2 tsp
  4. Ginger  1" piece
  5. Green Chilli   2 no. or to taste
  6. Peanuts,roasted   3 tbsp
  7. Rock Salt/Sendha Namak   to taste(if fasting or use reg salt)
  8. Cilantro   few finely chopped(optional)
  9. Lemon Juice   1/2 -1 tsp
  10. Oil    2 tsp(if fasting use peanut oil or ghee)
Method
Wash and soak sabudana/sago pearls in enough water for minimum 1 and half hour or over night or 2-3 hours. The sago pearls should be soft and puffed up.
When it is ready start preparing the ingredients for khichdi.
Wash and chop potato thinly and microwave cook in high for 2 minutes with little water and keep ready.
Roast peanuts , remove the skin and slightly crush it in the mortar (if desired) or use it as whole.
Finely chop ginger and green chilli, I pulse it in the blender for few minutes and used the coarse mixture.
Now heat oil in a pan, when it is hot add jeera allow to splutter.
Then add coarsely ground ginger and green chilli fry well and add roasted crushed peanuts and stir fry for few seconds.
And then add microwave cooked potato chunks and stir fry for 2 minutes.
After that add soaked, washed and drained sago pearls, enough salt and stir for 1-2 minutes.
Then lastly add lemon juice and some cilantro give it a stir and switch off the stove.
That's it...Sabudana Khichdi ready.
Notes:
If it is prepared on non-fasting days, you can also add mustard seeds while tempering and turmeric powder to the khichdi.
I used gold potatoes, so the potatoes were naturally yellow in color.
You can also add 1/4-1/2 tsp of jeera powder for additional flavor.
I like to add crushed peanuts in my khichdi but you can also use whole peanuts.
After soaking, rinse the sago pearls/sabudana using fine colander in running water and remove the excess starch.
