Again, this is my neighbor Aunt's recipe and I did only few changes due to lack of my ingredient and also instead of deep frying I baked them. Baked Namak Pare also turned out so perfectly crunchy and tasty.

- All Purpose flour/Maida 1/2 cup
- Whole Wheat flour/Atta 1/2 cup
- Kalonji/Onion Seeds 1/2 tsp
- Crushed Jeera/cumin seeds 3/4 tsp
- Coarsely Crushed Black Pepper 1/2 tsp
- Hing a pinch
- Salt to taste
- Turmeric Powder a pinch(optional)
- Oil 1 and 1/2 tbsp + 1 tsp for brushing
In a mixing bowl, add maida and wheat flour, turmeric powder, salt, hing, kalonji, crushed jeera and mix everything well.
Now add 1 and 1/2 tbsp oil and mix well with the flour.
Then using little water knead it to a stiff dough, do not use more water. The dough should be stiff and smooth, and cover the dough with plastic wrap and rest it for 20 minutes.
After that, pre heat the oven to 350 F.
And divide the dough into 2 equal portion and make each portion to a big round ball.
Now on a slightly floured surface(use atta or maida for dusting) roll one ball to a big 1/4 inch thick disc.
Take a knife or pizza cutter, cut the dough into thin horizontal stripes.
Now cut them vertically to give you small diamond shapes. Slowly, remove them from the surface & arrange them in a baking tray. Repeat with the rest of the dough.
After that brush the cut out diamonds with oil and bake it in a preheated oven for 13-15 minutes or until the edges turn light brown and crisp.
Once done, allow the baked namak pare to cool in wire rack and after cooling completely store them in an air tight container or enjoy with a cup of Ginger Cardamom Tea.
Notes:
My Aunt's Original recipe uses Ajwain seeds/Omam but I don't have Ajwain seeds in hand so used Kalonji/Onion seeds. Namak Pare with kalonji seeds tasted so good with a nice flavor.
So you can use ajwain or kalonji as per your preference.
Instead of diamond shape you can also cut into 2" long strips.
Also, namak pare are prepared using Maida but I used 1/2 cup maida and 1/2 cup atta combo.
Adding turmeric powder is optional and instead of black pepper you can also use Chilli powder.
