Baked Masala Peanuts / Masala Peanuts in Oven recipe with step by step photos. Masala Peanuts is a spicy, crunchy snack that is prepared using peanuts, gram flour and spices. Originally, masala peanuts are deep fried but it can also be baked in oven/toaster oven or using microwave with little oil. The low fat version of masala peanuts are equally tasty, crunchy and addictive. If you like peanuts then this is a must try guilt free snack recipe.
As I am using my Range oven as a storage for baking pans, cast iron pans, kadais, etc it is hard for me to use my oven for simple roasting or baking recipes. Every time I have to take all those pans out from the oven and without enough space i spread it either on floor or counter top and my whole kitchen is messy. So, i decided to buy a small counter top convection oven at least for some simple quick baking recipes and bought one last month from Costco. It is working fine so far and I am loving it. I tried this baked Masala Peanuts in my new Toaster Oven and it turned out so perfectly. Baked Masala Peanuts were crunchy, tasty and as good as the deep fried ones. I only put less salt, so I balanced it with tossing the baked masala peanuts with some chaat masala powder.

Method
- Raw Peanuts 1 cup
- Besan/Gram Flour 4 tbsp
- Rice Flour 2 tbsp and 1 tsp
- Chilli Powder 1 tsp or to taste
- Turmeric Powder 1/4 tsp
- Garam Masala Powder 1/2 tsp
- Hing 1/4 tsp
- Fennel seeds 1/4 tsp(crushed)
- Curry leaves few(finely chopped)
- Chaat Masala powder to taste(optional)*
- Salt to taste
- Oil 2 tbsp
Soak raw peanuts in the water for 5 minutes, after that drain the excess water using colander and keep ready.
After that in a mixing bowl add add rice flour, gram flour, chilli powder, garam masala, turmeric powder, hing, salt and mix well.Then take soaked peanuts in a bowl and flour-spices mix to it and toss the peanuts gently to coat evenly.
And then drizzle oil and mix everything well, if required sprinkle 1 tsp water.Now line a baking tray with parchment paper or grease it with oil and evenly spread the masala coated peanuts in a single layer.
Bake it in the Pre-heated oven for 12-15 minutes(It took 12 minutes for me).After that remove the tray from oven, allow the peanuts to cool down.
The peanuts will turn even more crispy and crunchy after cooling completely.
Now Baked Masala Peanuts are ready for tea time snack, store the left over in an air tight container.
Notes:
IF using toaster oven, you not need to pre heat, just turn the settings to bake mode, set temperature and timing that's it.
Each oven is different so check for peanuts after 10 minutes.
*Chaat Masala, I added less salt to my masala peanuts, so to balance the taste I sprinkle some chaat masala to the baked peanuts. Chaat masala sure give extra spice and taste.
Adding curry leaves is optional, if you don't like you can skip it.
Do not soak peanuts more than 5 minutes, the over soaked peanuts will be slightly soft even after baking, and if you bake for extra minutes it will burn and will not taste good(this is from my previous 3 experience, now i set timer) So set timer for 5 minutes and drain and mix ingredients.
