Banana Bread is one of the easiest way to use the over ripe bananas. Banana bread are perfect for kids breakfast along with a glass of milk. I have already shared an Eggless Banana Almond Bread recipe and this time baked with some chocolate chips. This banana bread is lighter than the eggless banana bread. I saved this recipe from a magazine, only I reduced the sugar quantity(used only 1/2 cup) and butter, as I don't have sufficient butter I replaced it with oil. Banana Bread turned out good, baked this banana chocolate chip bread in my toaster oven/counter top convection oven.My kids loved this bread and they enjoyed their breakfast without any complaints. Not only my kids I too enjoyed this rich banana bread and planning to make it again with some nuts & dry fruits combo. Now off to the recipe

- All Purpose Flour 2 cup
- Baking Powder 3 tsp
- Salt 1/4 tsp
- Sugar 3/4 cup
- Ripe Banana 2 no.
- Butter, softened 6 tbsp
- Oil 2 tbsp
- Egg 2 no.
- Milk 1/4 cup
- Vanilla Extract 1/2 tsp
- Chocolate Chip 1/2 cup(dark or semi sweet)
- Pre heat oven to 350 F and grease loaf pan with butter and keep ready.
- Mash or puree banana and keep ready.
- In a mixing bowl, sift flour, baking powder and salt together, combine well.
- In an another mixing bowl, cream butter and add sugar and beat until well combined and then add one egg at a time and beat for a minute then add oil, banana puree, vanilla extract, milk and beat for a minute.
- Now to the liquids add flour-baking powder mix and using a spatula mix everything gently.
- Lastly stir in chocolate chips and transfer the batter to the grease pan and bake it in the preheated oven for 50-60 minutes (mine done in 50 minutes, check tooth pick test, by inserting tooth pick to the center of the pan and it should come out clean without any batter).
