Thattai is a popular south Indian snack that is prepared using rice flour. I have already shared the regular version of Thattai & Ragi Thattai recipe. Today's thattai recipe is little different and I used more roasted gram dal flour/Pottukadalai maavu which gives perfect crunchy and crispy thattai. I also added ginger and onion for flavor.

Not for an occasion, you can make it anytime as a tea time snack. Makes 15 thattais(2.5 inch size)
Ingredients
  1. Rice Flour   1 cup(i used store bought rice flour)
  2. Pottukadalai Maavu/Roasted Gram dal flour   1/4 cup
  3. Butter, softened    1 and 1/2 tsp
  4. Channa Dal, soaked for 1 hr   1 and 1/2 Tbsp
  5. Peanuts   2 Tbsp
  6. Chilli Powder   1 tsp
  7. Cumin Seeds/Jeera   1 tsp
  8. Hing   1/4 tsp
  9. Salt   to taste
  10. Oil   to deep fry
To Grind
  1. Ginger   1.5 inch thick piece
  2. Pearl Onion/chinna vengayam 4 no OR Shallots  1 no.(roughly chopped)
Method
1.First grind onion and ginger using little water to a smooth paste and keep ready.
In a mixing bowl, add rice flour, pottukadalai maavu, chilli powder, hing, jeera, salt and mix well.
2.To it add softened butter, mix everything well and add ground ginger-onion paste and mix well with the flour.
Add water little by little and make it to a stiff, smooth and tight dough.
3.Then divide the dough into gooseberry sized 15 balls and using a cotton cloth or kitchen tissue** flatten the dough to 2.5 inch wide flat disc. Flatten it to thin disc.
Heat oil in a pan to deep fry, while oil is getting hot flatten the thattais and keep ready.
4.When the oil is hot turn the heat to low- medium heat and drop the flatten thattai gently into the hot oil. Depending on the kadai size, deep fry 2-3 thattais at a time.
After 30 seconds flip the thattais and cook till it turns crisp, light brown on both sides and the sizzling sound stops.
And then take out the fried thattis from oil using slotted spatula and drain the excess oil in kitchen paper towel. Repeat the same for remaining dough.
That's it...Crispy Thattai ready.
Notes:
Don't forget to soak channa dal before adding it to the flour.
Poking the flatten thattai before frying is not necessary, this thattai will not puff up and even if it is thick your thattais will turn crispy and crunchy.
The most important thing to note, deep fry in medium hot oil, if your oil is hot turn to low and wait for few seconds and then add the flatten disc to deep fry.
Otherwise this is a fail proof recipe.
Adding ginger and onion is optional but it sure gives nice flavor and taste.
