Vermicelli Upma Recipe With step by step Photos. After cooking varieties of Diwali Sweets & Snacks that ended up with lot of cleaning, I was damn tired and even had a kind of aversion towards food and kitchen. But, When I got an appreciation message from all my friends and neighbors for the tasty and delicious sweets/snacks, I felt so happy and all my pain was gone. After all the effort and hard work you put in, all you need to is a small appreciation right. Now coming to the Upma Recipe, Upma is an easy and quick versatile recipe that comes handy when you are run out of time or vegetables or not in a mood to cook elaborate meal just like me.
Though Upma, especially vermicelli Upma is a simple recipe not everyone can make a perfect tasty upma without overcooking vermicelli to a mushy upma. Roasting the vermicelli the right way and water measurement to the vermicelli and the method how we cook upma everything matters for a perfect Vermicelli Upma. This post is for beginners and bachelors who want to make simple and tasty homemade breakfast or evening tiffin. I have already shared the easiest Vermicelli Upma method that you can't end up with mushy vermicelli, but this is the proper method and original vermicelli upma.

First Chop vegetables & Roast Vermicelli and keep ready.
Then do Temper :
Saute onions & carrot, then add enough water to cook vermicelli
Once the water starts boiling add roasted vermicelli.
Then cook covered for 6-7 minutes, thats it tasty vermicelli upma ready.

To Temper
- Vermicelli 1 cup
- Water 1 and 1/4 cup
- Onion 1 big (sliced)
- Green Chilli 3 or 4(slit open)
- Ginger 1 tsp(finely chopped)
- Carrot 1 no.(chopped)
- Salt to taste
- Oil 1 tsp
Method
- Oil 1 tbsp
- Mustard seeds 1/2 tsp
- Channa Dal 1 tsp
- Urad dal 1 and 1/2 tsp
- Cashew nuts 5 no.
- Curry leaves few
- Hing a generous pinch
Notes
- First heat a pan, add tsp oil and after few seconds add vermicelli and roast in medium heat, keep stirring until the vermicelli turns light golden brown and flavor comes.
- Once done remove the pan from the stove and keep aside or transfer the roasted vermicelli to a plate.
- Now heat oil in a kadai, when it is hot add mustard seeds and allow to pop, then add channa dal , urad and roast it and after few seconds add cashews and roast till golden brown.
- Then add hing, curry leaves fry well then add ginger, green chilli and fry for few seconds then add onions and saute for 2-3 minutes and then add chopped carrot and stir fry for a minute.
- After that add 1 and 1/4 cup water, enough salt stir well and bring it to boil.
- When it starts boiling add the roasted vermicelli and stir well, then cover the kadai with tight lid and cook in medium high heat for 6-7 minutes(set timer).
- After that open the lid, stir well and that's it Tasty Vermicelli Upma Ready.
I added carrot only, you can also add beans, peas, potato for additional flavor and taste.
I used MTR vermicelli, you can use any vermicelli but there are some thin vermicelli(like Anil semiya)variety too, for that water level may vary.
To set timer is important, do not cook for long time, as we added water just the level to vermicelli it may get burned also cook with tight lid covered in medium high heat(see step wise pic below). This way, you will get soft and at the same time separate grains of vermicelli.
