Paneer is my kids' most favorite ingredient next to potato. They love paneer in any form, even if it is spicy they don't mind and enjoy it. Also, paneer is rich in protein and fat it is good for growing kids. Once in a week I cook any paneer recipe for them, last week made this Easy Paneer Kathi Roll for kids as an after school snack. Paneer Kathi Rolls are best when served warm.
You can use Plain Paratha or Rotis/Chapathi for making kathi roll. I usually prepare rotis ahead and just before making rolls, I lightly toast it in the tawa.
First Prepare Paneer Sabzi/ Channe Ke Sazbi. Heat oil in a pan, fry jeera and saunf/fennel seeds. Saute onions, then add crushed ginger garlic saute till the raw smell leaves.
Add spice powder - turmeric, chilli, kitchen king masala or garam masala.
Now add paneer, sprinkle little water and cook covered for 2 minutes. Lastly add cilantro and switch off the stove.
Then keep rotis, sliced onion, lemon wedges, chaat masala, yogurt-green chutney. Assemble paneer sabzi as shown below, then sprinkle chaat masala, sliced onions, lastly add tsp of curd-green chutney mix, some lemon juice and roll it tightly and serve immediately.

To Make Paneer Kathi Roll
First place a roti on a plate, to one side of the roti add 2-3 tbsp of paneer sabzi, to it add sliced onion, chaat masala powder and add 1-2 tsp of yogurt-mint dip, lastly squeeze few drops of lemon juice(optional).
Now roll the paratha tightly and wrap half of the roll with napkin or butter paper and serve immediately.
Notes & Variation:
For Paneer sabzi, you can use either cubed or crumbled paneer.
Instead of Kitchen King Masala You can use Garam Masala Powder.
You can also use 1 tsp ginger garlic paste instead of crushed ginger & garlic.
For Kathi Roll Roti/Paratha, I used 3/4 cup Atta & 1/4 cup Maida/All purpose flour.
You can also smear the roti with yogurt-mint dip instead of drizzling over the sabzi.
Instead of yogurt dip use green chutney alone or along with some sweet & sour sauce.
