Potato is a versatile ingredients that you can make tons of recipes with many variations, today I am sharing the most popular South Indian Aloo Masala recipe that is served with Masala Dosa. Not only for Masala dosa, you can serve it with Bread as Aloo Sandwich, Side Dish for Poori, Chapati and you can also make snack like Aloo Bonda(deep fried snack) and so on with this one single recipe. I have already shared the recipe for Broccoli Masala Dosa which is different from this simple aloo masala or potato curry for Dosa.
Aloo Masala or Potato Curry for Dosa requires only few simple basic ingredients and can be done in no time if you have boiled potatoes in hand. Here, in most of the Restaurants they serve Masala Dosa like this little dry curry. Now off to the recipe..
Heat oil in a kadai, do tempering with the above tempering ingredients, then saute ginger and green chilli, after that add onion and saute for 2-3 minutes.
After that add mashed potato, turmeric powder, enough salt and mix well and stir fry for a minute and cook covered in low heat for another minute and lastly add some finely chopped cilantro and switch off the stove. That's it aloo masala ready.

- Aloo/Potato 250 gm
- Onion 1 big(thinly sliced)
- Green chilli 4 or 5 no. (chopped)
- Ginger 2 tsp (finely chopped)
- Curry leaves few
- Cilantro few finely chopped
- Turmeric Powder 1/4 tsp
- Salt to taste
To Temper
- Oil 2 tbsp
- Mustard seeds 1/2 tsp
- Fennel seeds 1/4 tsp
- Channa dal 1 tsp
- Urad dal 1 and 1/2 tsp
- Hing 1/8 tsp
MethodNotes:
- Wash and boil potatoes until soft and tender, then peel the skin and mash it roughly and keep aside.
- Heat oil in a kadai, when it is hot add the tempering ingredients one by one and fry till the dal turns light golden brown.
- After that add finely chopped giner, green chilli, curry leaves and fry well.
- And then add sliced onion and saute until onion turns soft and light pink, do not saute for long time.
- Then add mashed potato, turmeric powder, enough salt and mix everything well.
- Let it cook covered for 1-2 minutes and lastly add some finely chopped cilantro and switch off the stove.
- That's it..Easy Peasy Aloo Masala ready. You can use this aloo masala/potato curry to make Masala Dosa, Sandwich, Side for Poori, Aloo Bonda.
This is a simple potato masala recipe, to this you can also add some finely chopped carrot and fresh green peas along with onion and saute well.
You can also add 1/4 cup of water and make it like curry and it goes well with Poori & Chapati.
