Egg Paratha is one of the most favorite breakfast of my kids and some times I do roll the Egg Paratha as Kolkata Egg Roll or sometimes with simple vegetable or Paneer sabzi. This time for a change made Chicken Frankie. Chicken Frankie is a popular street food, Chicken Frankie is nothing but a Simple Egg Paratha Rolled with spicy chicken masala, some chutney & sauces, the process may sound lengthy and difficult but in real it is so easy to make. Chicken Frankie is a delicious, filling and a satisfying meal perfect for breakfast or brunch. Sometimes I make it for Kids After school snack or tiffin with some left over chicken dry curry. - Chicken 250 gm(I used skinless, boneless Breast Chicken)
- Onion 2 no.(sliced)
- Tomato Paste 1 Tbsp
- Green Chilli 1 no.(chopped)
- Ginger Garlic Paste 1 and 1/2 tsp
- Chilli Powder 1 tsp
- Chicken Masala Powder 1 and 1/2 tsp
- Garam Masala Powder 1/2 tsp
- Turmeric Powder 1/4 tsp
- Cilantro 2 tbsp finely chopped
- Salt to taste
- Oil 1-2 tbsp
- Cumin & Fennel seeds 1/4 tsp each
For Chicken Frankie
- Egg Paratha 4 no.
- Green Chutney 2 Tbsp
- Hot & Sweet Sauce 2 Tbsp or to taste
- Onion, small 1 no.(sliced)
- Tomato 1 small, sliced
- Pepper Powder to taste
Method
- First Prepare Dough for Egg Paratha as mentioned in the recipe.
- And then prepare chicken Masala or sabzi, for that chop chicken into small pieces, slice onions, make ginger garlic paste and keep everything ready.
- Heat oil in a pan, when it is hot add jeera and fennel seeds, fry well and then add sliced onion, green chilli and saute for 2-3 minutes.
- After that add ginger garlic paste, turmeric powder and saute until the raw smell leaves.
- And then add tomato paste and saute for minute and then add chicken pieces, chilli powder, chicken masala powder and stir fry for 2 minutes.
- Now add little water(2-3 tbsp), enough salt and mix well and cook covered until the chicken is cooked to soft and tender.
- Once done, open the lid and add 1/3 cup of sliced onion and cilantro and just mix it and switch off the stove.(adding onion in this step is optional, as my kids doesn't like raw onions much I added in the hot chicken masala so its not much raw and spicy). That's it Chicken Masala is ready to roll in the paratha.
- How to Make Chicken Frankie:
- Now Make Egg Paratha as per this Recipe.
- Then Take egg paratha in a plate and smear it with 1-2 tbsp of green chutney, then add 2 Tbsp of above prepared chicken masala, some sliced onions, tomato and top it with some hot and sweet sauce, sprinkle some pepper powder and finally some cilantro.
- Now roll the paratha tightly and wrap half of the roll with napkin or butter paper and serve immediately.

Chicken masala or sabzi is ready, keep egg paratha, chicken masala, green chutney, sauce and everything ready to make Frankie or Chicken Kati Roll.
