Egg Paratha is one of my kids' favorite dish and I often make it for them as after school snack. Like other Parathas this Egg Paratha also doesn't require any side dish just Hot & Sweet Sauce or Ketchup is enough. I made a simple version of Egg mix with some onion, tomato & Chillies for this paratha but you can also add any desired vegetables & cheese to it.
Either way this gonna tastes yummy and am sure kids will love it. The original version of Mughal Paratha is made using All Purpose Flour and also shallow fried but here, I used Whole Wheat Flour and tawa roasted with little oil and butter. Cooking the Paratha in medium heat oil is necessary for this method and also use oil on each side you cook. The technique(folding the paratha to pockets) may look difficult but try it its really easy. If still you find it difficult to make pockets you can also make it like simple Egg Paratha, like this. - Whole Wheat Flour 1 cup
- Salt 1/4 tsp
- Oil 2-3 tsp
- Egg 4 no.s
- Onion 1 med(finely chopped)
- Tomato 1 small(finely chopped)
- Green chilli 2 no.(finely chopped)
- Cilantro 2 tbsp(finely chopped)
- Salt to taste
- Fresh Ground Pepper to taste
- Oil as need to toast paratha
- Butter 1-2 tbsp
Notes:*Heat tawa well, add oil and then put the rolled roti, cook each side in medium heat do not cook in high heat like how you cook rotis.
*My kids doesn't like more onions/veggies in the egg, so I added less than 1/2 cup of finely chopped onions. According to your preference you can add more or less veggies.
*You can also add capsicum, carrot, cabbage and also Cheese to the Egg Mix.
*I used Whole Wheat flour for Paratha you can use Maida/APF or use both Maida & Wheat flour /12 cup each.
*Resting Chapathi dough for 15 minutes minimum is must.
*You can also add some chilli powder & garam masala to the egg mix for spicy parata.Method
- First prepare chapati dough, in a mixing bowl add 1 cup flour, salt and mix well. Using water little by little knead to a soft and smooth dough. Use 2 tsp oil while kneading and once done, smear some oil on top the dough and rest for 15 minutes.
- Mean while, chop veggies for egg mix and keep ready.
- In a small mixing bowl, add 4 eggs and mix them well.
- To it add salt, finely chopped onion, tomato, green chilli, cilantro and mix everything well.
- Now take the resting dough, divide into 4 equal parts and make it to a roundels.
- After that take one portion, dip it in dry flour and roll it to a thin chapathi(refer video for thickness)
- Now heat tawa, when its hot add 2-2 tsp oil and place the rolled thin roti carefully.
- And then add 1-2 ladle full of egg mix over the roti, sprinkle fresh ground pepper and fold the sides to make a pocket(refer video).
- Using a dosa ladle press the paratha gently and cook in medium heat for 2 minutes and using dosa ladle or tong flip to other side carefully.
- Drizzle some oil on and around the paratha and cook for another 2 minutes or until paratha turns crisp and golden brown on all sides. Have to cook on vertical sides too, using tong hold the paratha sides and cook for few seconds.
- Lastly apply some butter cook for few more seconds on each side and remove from the tawa.
- That's it..Egg Paratha ready, serve hot with some Hot & Sweet Sauce or Green Chutney or any desired accompaniment.
