My kids love all varieties of Indo-Chinese recipes and Paneer recipes a lot. So why not to combine both and made a simple yet flavor rich rice recipe, Paneer Fried Rice. Instead of adding plain paneer pieces I just spiced up paneer with dry spice powders and roasted in Cast Iron pan before adding it to the rice. This way the paneer was crispy and tasty and everyone at home loved it. You can serve the roasted paneer separately along with some grilled vegetables as a started/side.

- Cooked Basmati Rice 2 cup
- Onion 1 small(Thinly sliced)
- Garlic 2 cloves(finely chopped)
- Cabbage 1/4 cup(thinly sliced, I used both green & red 1/4 cup ea)
- Carrot 1 medium(julienne, I skipped)
- Capsicum 1/4 cup(thinly sliced)
- Jalapeno 1/2 (thinly sliced) optional
- Pepper Powder 1/2 tbsp or to taste
- Soy Sauce 1/2 tsp
- Red Chilli Sauce 1-1and 1/2 tsp
- Salt to taste
- Red Chilli Flakes 1/2 tsp(optional)
- Sesame Oil 2 tbsp
- Cilantro 2 Tbsp, finely chopped for garnishing
To Marinate Paneer
- Paneer - 150gm
- Salt 1/4 tsp or to taste
- Pepper Powder 1/2 tsp
- Garlic Powder 1/4 tsp
- Ginger Powder 1/4 tsp
- Soy Sauce 1/2 tsp
- Kashmiri chilli Powder 1/2 tsp
Notes:I did not used Green onions, since my kids don't like the taste so I skipped it and added cilantro.No carrots in stock so just used onion, cabbage, cabbages/Green pepper and for extra spicy added 1/2 of a sliced Jalapeno Pepper.Use freshly ground Pepper corns for rich flavor and taste.I prefer Sesame oil/Gingely Oil for making Fried Rice but you can use any desired one.Burnt garlic gives nice flavor and unique taste, if you don't like it then just fry for few seconds then immediately add onions.Method
- First cook rice and spread the cooked rice in a rice plate and allow to cool completely.
- Marinate cut Paneer pieces with all the ingredients listed under "To Marinate Paneer" and keep aside for 20 minutes.
- Meanwhile Chop vegetables and keep everything ready.
- First, lets fry Marinated paneer pieces - Heat 2-3 tsp oil in a pan and roast the marinated paneer on all sides and once done keep aside.
- Now heat oil in a wok, when it is hot add finely chopped garlic and fry well.
- Then sliced onion and saute for a minute or less.
- After that add carrot/finely chopped green beans and stir fry for a minute and then add cabbage and stir fry for a minute or less.
- Then immediately add some salt, sugar and half of the pepper powder and stir fry well.
- Now add soy sauce, chilli sauce and stir fry for few seconds and lastly add cooked rice, enough salt, chilli flakes and mix everything well and fry in high heat for a minute.
- Then add roasted Paneer pieces and mix everything well and lastly add some cilantro and toss rice well with all the veggies & paneer pieces. After that taste rice and adjust pepper & salt accordingly.
- That's it. Flavorful Paneer Fried Rice Ready. Serve Hot with Gobi Manchurian or With Broccoli In Hot Garlic Sauce.
