Red Bell Pepper Peanut Chutney Recipe

Ingredients
- Oil 1 tbsp
- Raw peanuts 2-3 tbsp
- Channa dal 1 tbsp
- Onion 1 med
- Tomato 1 small or 1/2
- Red capsicum/bell pepper 1 med or 1/2
- Dry red chilli 6-8
- Tamarind small piece
- Garlic 3 cloves
- Coconut 1/4 cup shredded(optional)
- Salt to taste
- Water as needed to adjust consistency
For Tadka
- Oil 2 tsp
- Mustard seeds 1/2 tsp
- Curry leaves few
- Hing a small pinch
Notes:
Adding Coconut is optional. You can also make this chutney without coconut.
Always cool stir fried onion-tomato-capsicum things before grinding.
I have soaked tamarind in hand, so added it at the end. If you are using dry tamarind pieces, add it along with onion and fry well.
Method
- Heat oil in a pan when its hot add raw peanuts stir fry for few seconds then add channa dal fry till both turns golden brown.
- Then add dry chilli, garlic stir fry a minute and add onion saute until golden color, after that add sliced bell pepper and stir for 1-2 minutes.
- Now add tomato mix well and cook covered for 2 minutes or until tomatoes are soft.
- Lastly add tamarind stir fry well and add coconut saute everything nicely. Add salt mix well and finally add couple of spoons of water to end cooking. Let it cool completely and then grind to a little coarse chutney. Add tadka and serve with Idli/Dosa.
