Very simple and easy kids friendly lunchbox rice recipe using Tomato & Capsicum. Not spicy, tasty rice perfect lunchbox recipe for both adults & kids. Just boiled egg along with this tomato capsicum rice makes a complete healthy and yummy meal. For My kids' lunchbox I prefer Basmati Rice but you can use any desired rice.

- Cooked Rice 2 cup
- Onion 1/2 cup or less (finely chopped)
- Tomato 1/2 cup (finely chopped)
- Capsicum 1/2 cup(chopped)
- Ginger Garlic Paste 1 and 1/2 tsp
- Turmeric Powder 1/4 tsp
- Kashmiri Red Chilli Powder 1 and 1/2 tsp
- Garam Masala 1 tsp
- Tomato Ketchup 1 tsp
- Salt to taste
- Butter 1 tsp
- Cilantro/Coriander leaves 2 tbsp(finely chopped)
- Oil 2 Tbsp(i used Peanut Oil)
- Mustard seeds 1/2 tsp
- Urad dal 1/2 tsp
- Fennel seeds/Sombu 1/4 tsp
- Heat Oil in a pan, when its hot add mustard seeds and urad dal, let it splutter then add fennel seeds fry well.
- Then add finely chopped onions, saute for 2-3 minutes and add ginger garlic paste and fry until raw smell leaves.
- After that add finely chopped tomato, stir well and sprinkle pinch of salt and cook covered for 2 minutes.
- Then open the lid and mash(using back of laddle) the tomatoes nicely and add turmeric powder, chopped capsicum and stir fry for 1-2 minutes.
- And then add red chilli powder, garam masala and stir fry and add tomato ketchup, mix well and stir fry and now add 1/4 cup water, enough salt and let it boil.
- When it starts boiling to thokku, reduce the heat and add cooked rice, mix well with the masala.
- Then add 1 tsp butter, finely chopped cilantro and mix well and cook covered for a minute.
- That's it, Super Tasty Tomato Capsicum Rice is ready to pack for Lunchbox or serve hot with some Chips & an egg.
