Chilli Cheese Sandwich is a very simple breakfast recipe which my kids loved most. I prefer to keep the sandwich filling simple with just Onion & Capsicum alone and extra green chillies for the spiciness to balance the richness from mozzarella cheese. This sandwich is best when served hot, right away after grilling and also we prefer Marinara Sauce for Dipping. Adjust chilli and spices to your taste and also you can add more veggies like carrot, tomato and some boiled corn kernels.

- Bread Slice 8(I used Honey Wheat)
- Grated Cheese 1 cup
- Onion 1/4 cup(finely chopped)
- Capsicum 1/4 cup(finely chopped)
- Green Chilli 3 no.(finely chopped)
- Cilantro 1-2 Tbsp(Finely chopped)
- Garlic Powder 1/2 tsp
- Italian Seasoning 1/4 tsp
- Salt & Pepper to taste
- Butter 1 Tbsp or as needed
Notes:Adding grated carrot, chopped tomato, boiled corn kernels will give additional taste and flavor but this plain cheese with capsicum chilli has unique flavor and taste. Do give it a try.I did not have softened butter, so melted tbsp of butter and used it.You can also cook the sandwich in dosa tawa until both sides turn crisp and brown.Method
- In a mixing bowl, add all the ingredients from grated cheese to Salt & Pepper from the "Ingredients" mentioned above.
- Mix well and keep the cheese mix filling ready.
- Take a bread slice keep couple of spoons of filling, close it with another slice, top it with butter(I used melted butter).
- Heat grill pan or electric grill, brush it with some butter when it hot place the cheese filled bread slices and grill until it is done.
- Once done remove the grilled Cheese Sandwich from the grill and serve hot.
