Egg Bhurji Recipe is an easy and very simple side dish for Paratha / Phulka , Chapathi and even as a Sandwich filling for Bread. Egg Bhurji is one of my most favorite side dish for rotis and this dish has some sweet childhood memories. One of my dear friend brings Egg Bhurji & Plain Paratha for lunch almost everyday. But she never ate her Paratha & Bhurji for lunch because me and my other friends will finish it off even before lunch break😂 and we gave our lunch(mostly rice dishes or Idlis) to her. My Friend's Mom' Egg Bhurji is unbeatable. I tried my best to recreate Her recipe and the bhurji turned out as good as Her's. But can't beat Mom's preparation rt?! This recipe of Egg Bhurji requires lots of onion and tomato which needs to be saute in oil nice and soft, so that the Egg gets cooked well with the masala and the bhurji will be juicy without dry scrambled eggs texture. Notes:
- Egg 5
- Onion 1 Cup, 250 ml size (finely chopped)
- Tomato 3/4 cup (finely chopped)
- Green chilli 3 no.(finely chopped)
- Turmeric Powder 1/4 tsp
- Chilli powder 1 tsp
- Kashmiri Chilli Powder 1 tsp
- Garam Masala Powder 1 tsp
- Jeera/Cumin Seeds 1/2 tsp
- Fennel seeds 1/2 tsp
- Coriander leaves 2-3 Tbsp (finely chopped)
- Salt as needed
- Oil 2 -3 Tbsp
Saute Onions & Tomatoes well, it gives nice texture and quantity to the recipe.
If you want, you can also add 1 tsp ginger garlic paste, if using add after sauteing onions to soft and transparent, and fry until raw smell leaves and add tomatoes and proceed with recipeMethod
- Crack and pour the eggs in to a bowl and mix gently (do not beat)and keep aside.
- Heat oil in a non-stick pan, add Cumin and fennel seeds allow to pop and add onions, green chillies and mix well. Sprinkle some salt and cook covered for 1-2 minutes.
- Then open the lid, saute well until onion gets soft and transparent.
- Now add chopped tomatoes, sprinkle some salt and saute for a minute and close the pan with lid and cook covered for a minute.
- And then open the lid, using a masher, gently the mash the tomatoes and mix everything well.
- After that add turmeric powder, chili powder, kashmiri chilli powder and fry well.
- Then add 2-3 tbsp of water to prevent masala burning and add enough salt and allow the masala to boil.
- Once starts boiling, Pour the egg to the onion-tomato masala and keep stirring for 2-3 minutes until the eggs cooked and scrambled well with the onion tomato masala.
- And add garam masala powder, mix everything well and stir fry in medium high heat for a minute.
- Lastly add in some finely chopped cilantro, mix well and switch off the stove.
- That's it..Super Tasty Egg Bhurji ready. Serve Hot with Paratha/Phulka or Bread.
