Its been a while since I baked cake at home. Mostly I bake Banana Muffins just to use the over ripe bananas and few days back kids were asking to bake some cake to celebrate 1k subscribers on our YouTube Channel. Since, I had only basic ingredients at home, made this Quick Tea Cake Recipe. Tea Cake is nothing but a simple Vanilla Flavored Loaf Cake perfect for snack time along with some Chai or Coffee.

- All Purpose Flour/Maida 1 and 1/2 cup
- Corn Starch 2 Tbsp
- Milk Powder 2 Tbsp
- Baking Powder 1 tsp
- Baking Soda 1/4 tsp
- Salt 1/8 tsp
- Yogurt/Curd 1/4 cup
- Oil 1/2 cup
- Vanilla Extract 1 tsp
- Milk 4 -5 Tbsp*
Notes:I used 9 inch loaf pan, for this amount of flour, 7 or 8 inch pan is enough.For Milk powder, you can also use Milk Mawa Powder which I used for this cake.Corn Starch can be replaced with Vanilla Custard Powder.Instead of plain yogurt, you can also use Vanilla Yogurt.Depending on the flour quality you might need 1-2 Tbsp extra or less milk. So adjust accordingly.Method
- Pre heat oven to 350 degree F and grease or line loaf pan with parchment paper and keep ready.
- In a mixing bowl, sift all dry ingredients one by one for 2 times. This is necessary to get light, soft and perfect cake texture for Eggless Recipe.
- In another mixing bowl, add yogurt, oil, vanilla extract, milk and beat well until it form a white frothy liquid.
- To it add sugar and whip nicely using a hand mixer or whisk until sugar dissolves completely.
- Now to the liquid ingredients mix, add flour little by little and mix without any lumps.
- Then transfer the cake batter to the loaf pan and bake for 35-40 minutes or until inserted toothpick comes out clean.
