Today's recipe is a spicy Mutton Fry/Dry Roast Recipe which is easy to make with simple ingredients and preparations. I used Instant Pot to cook Mutton and the mutton pieces cooked so soft and perfectly in 20 minutes( Meat Stew Mode). If cooking in regular pressure cooker cook for 8-10 whistles or as needed. This Mutton Fry can be served as an accompaniment with Just Rice & Rasam. You can also roast nice and dry and serve as a Starter with some onion slices & lemon wedges.

- Mutton 400gm
- Pearl Onion/Chinna Vengayam 8 no.s
- Fennel seeds 1 tsp
- Clove 3 no.s
- Oil 2 Tbsp
- Ginger Garlic Paste 1 tsp
- Turmeric Powder 1/4 tsp
- Kuzhambu Milagai Thool 1 tsp
- Salt to taste
For Mutton Fry/Dry Roast
- Oil 2 tbsp
- Mustard seeds 1/2 tsp
- Fennel seeds/Sombu 1/2 tsp
- Curry leaves 1 sprig
- Green Chilli 2 no.
- Onion 1 medium(finely chopped)
- Tomato 1 small(chopped)
- Red Chilli Powder 1 tsp
- Mutton Masala Powder 2 tsp
- Coriander Powder 1 tsp
- Fresh Ground Pepper 1-2 tsp or to taste
- Fresh Cilantro 2-3 tbsp(finely chopped)
Notes:*If chinna vengayam/pearl onions not available, just use Red onion 1 small size, roughly chop and pulse it in blender along with sombu and clove pieces.*I used Shakthi Brand-Mutton Masala Powder, you can use any brand. If mutton masala not available you can use 1 tsp Garam Masala or Curry Masala Powder.*Use Freshly ground pepper powder, for that grind 2-3 tbsp pepper corns to a coarse powder and use it as needed in the recipe.*If using more than 400gm of Mutton, please increase other ingredients quantity accordingly.Method
- In a blender, add pearl onions, fennel seeds/sombu, clove and pulse it to a coarse mix and keep ready.
- Pressure cook Mutton, I used Instant Pot. IF using regular cooker just heat it and follow the steps below.
- In Instant Pot, turn on Saute Mode for 15 minutes and when its hot add oil.
- After that add ground onion-sombu-clove mix, some curry leaves and stir fry for a minute.
- Then add cleaned mutton pieces, turmeric powder and saute for few minutes.
- And then add ginger garlic paste and stir fry for 4-5 minutes.
- After that add kuzhambu milagai thool, little salt and stir for 4-5 minutes and add 1/2 cup water.
- Cancel saute mode and Turn On Meat Stew Mode and choose 20 minutes.
- Let it cook and wait until the pressure cools down naturally.
- Meanwhile chop onion and tomato and keep other things ready for Mutton Fry.
- Once the mutton has cooked well, start frying the mutton.
- Heat oil in a cast iron pan/kadai or any heavy bottomed pan, when its hot add mustard seeds, fennel seeds let it splutter and then add curry leaves, 2 green cilli and stir fry.
- Then add finely chopped onion and stir fry until onion turns soft and light brown.
- And add ginger garlic paste and saute until raw smell leaves.
- Now add chopped tomato, stir well and cook covered for 1-2 minutes and open the lid and mash the tomatoes well.
- Now add mutton pieces with its stock, red chilli powder and mutton masala powder, coriander powder stir fry in medium high heat until the mutton pieces gets well with the masala.
- Once the mutton broth gets dried and mutton fry starts leaving oil, add pepper powder and stir fry for a minute.
- Lastly add some fresh curry leaves, cilantro and mix everything well and switch off the stove.
- Let the mutton fry sit in the pan for a minute.
- That's it..Tasty & Spicy Mutton Fry/Varuval ready. Serve Hot.
