No special occasions or festival goes without this Delicious Vermicelli Kheer. This time kids wanted to have a sweet or cake post as 50th video on Spicy Treats' YouTube Channel. So, made our Family's favorite Vermicelli Kheer/Vermicelli Paal Payasam. If interested checkout our Channel Page and subscribe for more videos. I have already shared Vermicelli Kheer Recipe before but that recipe require sweetened condensed milk but this Vermicelli Kheer/Seviyan Kheer recipe doesn't require condensed milk instead we going to cook milk until condensed to thick and creamy.
This method is very simple and all you need is to stir milk now and then so that the milk malai will gets mashed well with the milk(like how we do to make Rabdi). We like more nuts in the Vermicelli Kheer, so I added mixed nuts and soaked raisins. Instead of frying raisins, try adding soaked raisins for better crunchy and tasty texture. I used only Cardamom for flavor but you can also use some saffron strands too. I prefer cardamom alone for vermicelli kheer. Now off to the recipeVermicelli Kheer Recipe / Seviyan Kheer RecipePrep Time : 5-8 Minutes | Cook Time : 25-30 MinutesRecipe Category : Desserts/Sweets | Serves 4-5Ingredients
- Milk, Whole Milk 4 cup(250 ml cup)
- Vermicelli/Seviyan 1/2 cup
- Sugar 1/2 cup
- Cardamom Powder 1/2 tsp(or Crush 5 cardamom)
- Cashew nuts 2 Tbsp(chopped)
- Chironji Seeds 1-2 tsp
- Melon Seeds 1/2 -1 tsp
- Pistachios 10 no.(crushed coarsely)
- Raisins 2 tsp(soaked in 1 Tbsp water)
- Salt a tiny pinch
- Turmeric Powder a tiny pinch(optional)
- Ghee 2 tsp + 1 tsp
Notes:Use Whole Milk for more creamy and rich Vermicelli Kheer even without condensed milk.Also before adding vermicelli cook milk to slightly thick, after 1st boil reduce heat to medium and keep stirring the milk, scratch the side of the pan to mash the malai with milk.After adding vermicelli cook for only 4-5 Minutes, this time is more than enough to cook vermicelli if you cook it for long time then vermicelli will release more starch and the kheer will be too thick and gummy.Always add sugar after the vermicelli is cooked soft.Adding pinch of salt, enhances the sweetness and flavor but if you don't like skip it.I prefer pinch of Turmeric powder in my kheer, it gives little yellow ting to the kheer but its purely optional. Or you can replace it with few saffron strands.You can also use Roasted Vermicelli for this kheer, if so add it directly to the boiling milk.For an instant version, instead of sugar use 1/2 cup sweetened condensed milk and reduce milk cooking time.Add or reduce nuts and raisins to your taste. I don't like roasting raisins so I soak it for 10 minutes and add it directly to the kheer.Method
- Heat a wide heavy bottomed skillet, add 2 tsp ghee mix it all over the pan, add 1/2 cup vermicelli and cashew pieces, roast in medium heat until the vermicelli turns light golden brown.
- Once done, transfer the roasted vermicelli to a separate plate and to the same skillet add 4 cups of milk.
- Cook in medium high heat for a while, cover the pan with lid and stay near the stove and keep watching.
- Once the milk starts boiling, open the lid and keep stirring (as shown in the video) and mash the malai(top layer/paal aadai) with the milk.
- After the milk has turned slightly thick, add vermicelli, soaked raisins and mix everything well.
- Let the vermicelli cook for 4-5 minutes(set timer for 5 mins and not to cook more than that) and then add 1/2 cup of sugar and mix well.
- Cover the pan again and let it cook in medium heat for another 5 minutes.
- Now and then open the lid, stir well and scratch the malai formed on the sides of the pan and mix well with the kheer.
- And now add cardamom powder, melon seeds, chironji seeds and mix well.
- Let the Vermicelli Kheer simmer for few more minutes.
- Lastly add a tsp of ghee and some crushed pistachios and mix well.
- That's it..Super tasty and creamy Vermicelli/Seviyan Kheer ready. Serve Warm or Chilled Vermicelli Kheer.
