Sweet Corn Sundal is one such easy and tasty sundal with very simple preparation. It just needs boiling Corn and a simple tempering, no onions or fancy masalas used in this sundal recipe. Its even a perfect filling and healthy snack for Diet & Diabetic people. I love Sweet Corn Sundal more than the Butter Corn. Addition of shredded carrots & coconut makes it even more colorful and tasty.

Ingredients
- Sweet Corn Kernels(Fresh or Frozen) 2 cup
- Green Chilli 2 or 3 (Slit Open)
- Grated Carrot 2 Tbsp
- Grated Coconut 1 Tbsp
- Salt to taste
- Cilantro few finely chopped for garnishing
To Temper
- Coconut Oil 1 Tbsp
- Mustard Seeds 1/2 tsp
- Urad Dal 1 tsp
- Curry leaves few
- Hing a generous pinch
Method
- I used Frozen corn, Add 2 cup of corn kernels in a pot, add enough water and salt to cook. Cook covered for 5-6 minutes.
- Once the corn is cooked soft, switch off the stove, drain the cooked corn using a colander and keep aside.
- Heat oil in a pan, add mustard seeds let it splutter, then add urad dal and fry till golden brown.
- After that add hing, slit green chilli, curry leaves fry well and now add the cooked sweet corn kernels.
- Mix everything well and stir fry 1-2 minutes.
- Add grated coconut and carrot, give a nice stir. No need to cook for long time.
- Once done, switch off the stove and serve the spicy Sweet Corn Sundal hot.
- You can also squeeze some lemon juice in the end or just before serving.
