Mango Chia Pudding is a must try Mango Dessert Recipe, that is delicious and equally healthy. Chia Puddings are my favorite and often include Overnight Chia Puddings for my breakfast. Chia Puddings are also an excellent option for Desserts to satisfy the sweet cravings, with the addition of flavors and Fruits like Rose Chia Pudding, Chocolate Chia Pudding and this must try Mango Chia Pudding are my favorite options for healthy desserts. No cooking involved and just the setting time other than that any one can make this Mango Chia Pudding in no time.
Here, I have used Unsweetened Almond Milk for this Pudding, but you can use regular whole milk, coconut milk or any plant or nut based milk to make Mango Chia Pudding. Try to use good sweet Mango Variety for rich flavor and taste.
now add 2-3 Tbsp maple syrup mix everything well and cover the bowl and let it rest for 1-2 hours.
After an hour or more, chia pudding is ready, take mango puree & chopped mangoes and assemble the pudding in an individual serving container. Layer chia pudding and mango puree alternately
Or combine chia pudding with mango Puree & chopped Mangoes. Top it with toasted coconut & some crushed pistachios.

You can serve this Mango Chia Pudding in two ways, one is just combine Mango Puree & Chopped Mangoes with the soaked Chia Seeds. And the second method is layer Chia seeds & Mango puree & Chopped mangoes separately in a serving bowl and serve with some toasted coconut & Crushed Pistachios toppings. Toasted Coconut adds lovely flavor and texture to the pudding.

- Chia Seeds 3 Tbsp
- Almond Milk 1 Cup
- Maple Syrup 2-3 Tbsp
- Mango Puree 1 Cup
- Chopped Mangoes 1/2 Cup
- Toasted Coconut 2 Tbsp
- Crushed Pistachios 2 Tbsp
Notes:Let the Chia Seeds to soak & swell for minimum 1 hour to get soft and tasty chia pudding. You can also let it soak overnight in the refrigerator.I did for 1 and 1/2 hour and the chia seeds soaked and swelled up perfectly the way I wanted.Try to use good ripe mangoes, you can also use Canned Mango Pulp (Alphonsa variety or Kesar Mango Pulp)Instead of Maple Syrup you can also use Honey or Simple Syrup.Pinch of Cardamom Powder can also be used for flavor but with just sweet mangoes adds lovely flavor and taste to the pudding.Mango Chia Pudding stays good in the refrigerator for 2-3 days.For Toasted Coconut, take thick 2-3 Tbsp of shredded coconut and dry roast in a pan until moisture dries and coconut turns crisp and flavor comes. Use this as topping for Mango Chia Pudding.Method
- In a medium size bowl, add 3 Tbsp Chia seeds and almond milk combine well together.
- To it add Maple Syrup mix everything well and cover the bowl with lid and let it rest for 1-2 hours.
- You can refrigerate or let it soak in the room temperature too.
- Meanwhile chop 2 or 3 sweet ripe mangoes and blend them to a smooth puree without the addition of water and keep aside. Keep about 1/2 cup of chopped mangoes as such for toppings.
- After an hour, the chia seeds must have soaked and swelled up well.
- In a serving bowl, add 1 ladle of chia seeds and as a next layer add mango puree with some chopped mangoes. Top the mango layer with some toasted Coconut slices and some crushed pistachios.
- Alternatively, you can also take 1/2 of the chia seeds pudding in a serving bowl, add 1/2 cup of mango puree and couple of spoons of chopped mangoes combine everything well and serve mango chia pudding with some crushed pistachios & coconut toppings.
