Egg Fried Rice is a quick and simple recipe that can be prepared in no time & perfect for lunchbox or weekend lunch. Egg Fried Rice is also one of the easy way to cook left over rice in a yummy way. Most of the time I finish my left over rice with this Egg Fried Rice Recipe. My kids favorite rice recipe, they will eat Egg Fried Rice everyday. So I Often make this egg fried rice for their lunchbox or weekend lunch along with their favorite Chilli Chicken.
For Indo-Chinese Style Fried rice, its best to use Basmati Rice but this time I used regular left over rice. Basmati Rice sure adds nice flavor. Depending on the soy sauce the color of the rice looks light or dark color. In this recipe, I did not use much sauces only soy sauce & black pepper powder. If you like you can also use some green or red chilli sauce & little vinegar to the recipe.

- Cooked Rice 2 cup
- Egg 4
- Garlic, finely chopped 1 tsp
- Spring Onion, white part 2 Tbsp(finely chopped)
- Onion 1 medium, chopped
- Carrot, thinly sliced 1/4 cup or less
- Capsicum, thinly sliced 1/4 cup
- Cabbage, thinly slice 1/2 cup
- Soy Sauce 2-3 tsp
- Red Chilli Flakes 1/2 tsp
- Salt to taste
- Ground Pepper 1 tsp + 1/2 tsp or as needed
- Sesame Oil 2 Tbsp
- Peanut oil or any oil 2 tsp
Notes:
Saute or stir fry the vegetables and rice in medium high heat.
The vegetables needs to be crunchy so don't saute for long time.
I like to add sauces over the rice, so that the vegetables remain fresh and in original color. But you can also add the sauces to the vegetables, stir fry and then add rice, enough salt and stir fry well.
You can also cook the eggs in the same wok, transfer the eggs and then proceed fried rice in the same wok.
Method
- If using freshly cooked rice, spread the cooked rice in a rice plate and allow to cool down completely. Chop vegetables and keep everything ready.
- First in a pan or wok, add 2 tsp oil when its hot add the eggs, little salt and pepper and stir fry the eggs until it is cooked soft, once done transfer the stir fried eggs to a plate and keep aside.
- Now heat oil in a wok, when it is hot add finely chopped garlic and fry well.
- Then add spring onion white, chopped onion and saute for a minute or less.
- After that add carrot, capsicum and cabbage stir fry for a minute and then immediately add some salt and half of the Ground Pepper and stir fry well.
- Now add rice, soy sauce, chilli flake, enough salt and enough Ground Pepper for the rice and stir fry in medium high heat for 2 minutes and lastly check for seasoning and if needed add some more pepper powder and finely add some chopped spring onion green and stir well and switch off the stove.
- That's it. Flavorful Egg Fried Rice Ready. Serve Hot with some finely chopped spring onions on top along with Chilli Chicken or Gobi Manchurian or With Broccoli In Hot Garlic Sauce.

In a wok, add oil fry garlic until light brown, then add spring onion whites
chopped onion, give a nice stir then add thinly sliced vegetables, little pepper powder
half of the salt and stir fry the vegetables for half a minute. Then add cooked rice, scrambled eggs
Soy sauce, red chilli flakes, enough salt, pepper powder and stir fry the rice until everything combined well.
Now check for seasoning, add pepper powder or salt, if needed & lastly add some finely chopped spring onion greens & switch off the stove.
